Especially with holiday hosting coming up, this will be one recipe you’ll be able to whip up anytime with easy pantry ingredients. This roasted chicken leg is one of those recipes that looks like you did A LOT, but really, the oven did most of the work! The chicken comes out golden on the outside, and ridiculously juicy, tender, and literally falling off the bone. And, there’s a side dish of chicken-dripping potatoes and onions ready at the same time!

Ingredients For Oven Roasted Chicken Legs
- 4 large Whole Chicken Legs bone-in skin-on
- 2 tablespoons olive oil
- 2½ teaspoons paprika
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- ¾ teaspoon dried thyme
- ¾ teaspoon ground cumin
- 1 teaspoon chicken powder
- 1½ teaspoons kosher salt* *Chicken powder can vary quite a bit in saltiness, so adjust the salt depending on the brand you use.
- 1 teaspoon black pepper
- 2 medium yellow onions cut into thick wedges
- 8–10 Cloves garlic peeled and lightly smashed

I have 3 key tips for perfectly baked chicken: dry skin, seasoning, and temperature:
- Dry Skin: I always pat the chicken super dry with paper towels before seasoning. This helps the seasoning stick and gives you a better golden finish later. Place the chicken in a large baking dish.
- Seasoning: The biggest mistake with roast chicken is under-seasoning. Whole chicken legs are thick, so you want a generous spice mixture. I always mix my spices first and REALLY massage everything into the chicken. This way, there’s flavor in every single bite.
- Temperature: The chicken is safe to eat once the thickest part reaches 165°F, but for chicken legs I prefer taking them closer to 175–185°F. Dark meat becomes more tender as it cooks past 165°F, which is what gives you that juicy, almost fall-off-the-bone texture.

Roasted Potatoes and Onions with Drippings
My favorite way to multitask with this dish is adding that bed of onions, garlics, and potatoes underneath. This is an automatic side dish with no extra steps. Don’t be shy with the onion and garlic! As the chicken roasts, they become soft and sweet and soak up all of those seasoned chicken juices. This also works with other vegetables, too, like carrots, celery, and broccoli. It saves you time prepping other dishes, and is absolutely delicious!

High-Heat Finish with Fresh Lemon
This chicken is also super tender thanks to two rounds of roasting. The slower first roast allows the chicken legs to cook gently at a lower temperature. This keeps all the moisture inside so it stays really juicy and tender, and allows the connective tissues inside dark meat to slowly break down.
Then, the second high temperature roast crisps up the skin and turns it that beautiful golden color. This is also perfect timing to add the lemon slices for that fresh, citrusy flavor. It adds a fruity tartness that definitely cuts through that rich chicken fat in every single bite. Keep in mind, adding the lemon at the first roast will cause them to dry out and turn bitter.

How To Make Oven Baked Chicken
- Preheat: Preheat the oven to 350°F (175°C).
- Prepare the Chicken: Pat the chicken legs really well with paper towels until the skin is as dry as possible. This helps the seasoning stick and gives you a better golden finish later. Place the chicken in a large baking dish.
- Make Seasoning: In a small bowl, combine paprika, onion powder, garlic powder, dried parsley, oregano, thyme, cumin, chicken powder, salt, and black pepper. Mix everything together first so every piece of chicken gets an even amount of seasoning.
- Season Chicken: Drizzle the chicken with 2 tablespoons of olive oil. Sprinkle the seasoning mixture generously all over the chicken. Now use your hands to REALLY massage the seasoning into the chicken, making sure to coat the top, bottom, sides, and all the little crevices. You want seasoning in every single bite!
- Add Onion and Garlic: Scatter the onion wedges and smashed garlic cloves around and underneath the chicken. Arrange the chicken skin-side up in one even layer.

- Add Lemon: After 50–55 minutes, remove the chicken from the oven. Add the fresh lemon slices around and on top of the chicken. Turn the oven temperature up to 450°F (230°C).
- Finish at High Heat: Return the chicken to the oven for another 10–15 minutes, or until the outside is beautifully golden and the skin has started to crisp. Test doneness with a meat thermometer. It should reach 165°F to be safe to eat, but for dark meat I prefer closer to 175–185°F.
- Rest and Serve: Remove the chicken from the oven and let it rest for 5–10 minutes before serving. Spoon the roasted onions, garlic, and all of those delicious pan juices over the chicken.

Make Ahead For More Flavor and Crispiness
If you have time, I HIGHLY recommend seasoning the chicken the night before. All you need to do is mix the seasoning, and massage it into the chicken. Then, refrigerate the seasoned chicken for up to 24 hours. Not only does this make dinner easier the next day, but it also gives the seasoning more time to penetrate the chicken. Trust me, it’ll be even more flavorful.
If you want the skin to get especially golden, refrigerate the seasoned chicken uncovered, skin-side up overnight. This helps dry out the surface of the skin. Then, when you’re ready to cook, just take the chicken out of the fridge while you preheat the oven. After that, you can continue the recipes as written.

Notes
- Don’t under-season. Whole chicken legs are big pieces of meat, so they can handle a generous amount of seasoning.
- Pat the chicken dry. This is especially important if you want a golden exterior.
- Use a thermometer. Chicken legs can vary dramatically in size. One batch might be perfect after 60 minutes while another needs closer to 70. Make sure your thermometer isn’t touching the bone when checking the temperature.
- Don’t stop at 165°F if you want really tender legs. While 165°F is the minimum safe temperature for chicken, dark meat has more connective tissue and becomes noticeably more tender when cooked further. I prefer taking them closer to 175–185°F.
- Save the pan juices. The chicken drippings mixed with the roasted onion, garlic, lemon, and spices are honestly one of the best parts of this recipe.
