Lazy Korean Spicy Tofu Noodle Soup

This super easy Spicy Tofu Noodle Soup is the lazy noodle soup version of my favorite Korean Spicy Tofu Stew! When I'm craving the flavors of tofu stew in a pinch, this is a quick one-bowl meal I make. With spicy, aromatic soup soaked into every bite of tofu and noodles, this is the perfect lazy noodle soup for winter. Ingredients
- ½ onion chopped
- 1 tablespoon minced garlic
- 2 green onions chopped (separate white and green parts)
- 1 tablespoon Korean red chili flakes adjust to your spice tolerance
- 1 tablespoon soy sauce
- 2.5 cups Dashi Stock or any stock of your choice
- 1 serving Noodles
- 1 servings Medium-firm Tofu
- 1 egg optional
Instructions
- Heat a pot over medium-high heat and add a drizzle of oil.
- Once hot, add the chopped onion and the white parts of the green onions. Sauté for about 2 minutes, or until the onion turns translucent.
- Stir in the Korean red chili flakes, soy sauce, and minced garlic. Mix well to combine.
- Pour in your chosen stock and bring it to a gentle simmer.
- Add the noodles and tofu to the simmering broth. Cook until the noodles are tender and the tofu is heated through.
- If using an egg, gently crack it into the pot about 2 minutes before finishing cooking.
- Garnish with the remaining green parts of the green onions and serve immediately. Enjoy!
