Welcome back to What I Eat In A Day, where I show you a realistic view of what I eat in a day when it’s that time of the month. Today I have a busy day, and I need some comfort foods that are light, filling, and warming. I started out my day with a Vegetable Congee and Miso Salmon. For lunch, i made a hearty yet refreshing Creamy Spicy Tuna bowl. I ended the day simply with a super easy Air Fried Steak with Kai Dong Noodles and Kale Salad.

Prepping Ahead Side Dishes For Maximum Comfort
What really helps me get through busy weekdays is my Sunday meal prep. I keep my favorite dishes stocked so I can use them in any meal throughout the week. Today, I added my cucumber salad to multiple meals: as a side dish for breakfast and a topping for lunch. It’s sweet, sour, and crunchy – and adds a bit of brightness to any savory dish.


I also make this Korean Bean Sprout often as a meal prep side dish. It’s another versatile, yet easy veggie to add to any meal. It keeps just as well in the fridge, and I pair this bean sprout often with the cucumber salad to add some variety to my meal! I really like not having to rush to cook many dishes at once, and instead I can just pull it out of the fridge.

Breakfast: Vegetable Congee and Miso Salmon
I’m spending today catching up on to-dos I couldn’t get to in Taiwan, and I’ll need a hearty breakfast to keep me going. So, I’m going to put a few dishes together, almost like a traditional Japanese Breakfast! To start, I made a pot of comforting Vegetable Congee, which is one of those dishes my mom would always make for me when I’m feeling a little sick.


I pair my congee with a piece of my Air Fryer Creamy Miso Salmon. Salmon’s just one of those proteins that doesn’t weigh you down after your meal, and that’s exactly what I need right now. Honestly, the air fryer is a lifesaver in the morning when I’m rushing to get things started. It takes no time at all to prep something and let it cook in the air fryer while I move on to a different task.

Lunch: Creamy Spicy Tuna Rice Bowl
For lunch, I knew I wanted spicy, but refreshing. I decided to whip together a quick Creamy Spicy Tuna Rice Bowl. The beauty of this recipe is simple: You just mix, assemble, and eat! I paired my creamy tuna today with Purple Multigrain Rice for a chewier bite. I topped it with sweet & sour cucumber, some chopped kale, and a soft boiled egg. It’s fiber-rich and healthy, with a nice creamy kick.

Creamy Spicy Tuna Mix
Mix all ingredients together and thatโs it!
- 1 can tuna – preferably Korean ones but if not, any oil based tuna works
- 4 tbsp Japanese mayo
- 1 tbsp Korean red chili paste
- 1/2 tbsp sesame oil
- Black pepper to season
- Pinch of Korean red chili flakes if you like it spicy


Dinner: Easy Air Fried Steak with Spicy Noodles
It’s been a long day, so we’re keeping dinner simple: Air Fried Steak and Spicy Noodles with some Spicy Kale Salad. Steak in the air fryer is SO convenient = My favorite go to recipe. Iโve been really loving getting steaks from Costco because of the good quality – it’s actually a great value! Combined with Kai Dong noodles, this has been a staple meal for my family and I almost every week!


I’m still craving spicy, so the Spicy Kai Dong Noodles with the Spicy Kale Salad really does hit the spot. I don’t know what it is about being on my period that always makes me crave spicy, but it’s my go-to every month. My Kai Dong Noodles and Sauces make it so easy to quickly whip up these Spicy Garlic Noodles, so I keep making these again and again.
