Korean Pineapple Soju Cocktail
This Korean Pineapple Soju Cocktail is an easy way to take your dinner party to the next level. This Korean mixed drink is tart, fizzy, and refreshingly summery. It’s the perfect accompaniment for my family dinner main dish: Korean Pork Belly Wraps. You’ll have to make this for everything from an outdoor picnic or barbeque to a dinner party! Made with only 3 ingredients, this is the kind of drink that will cool you down without being too sugary!

This is a Korean Pineapple Cocktail I put together with extra soju from cooking Korean Pork Belly Wraps. We’ve got a special dinner to meet Dom’s brothers girlfriend for the first time! Since we’ve been hosting so many dinners recently, I’ve been looking for hosting recipes that make things faster and easier. This soju cocktail can be done super quickly before your guests arrive!
This Pineapple Soju is actually a super popular drink mixed drink in Korea. It is the right amount of sweet, sour, and fizzy that all of your guests will love. The ingredients are simple, and super super tasty. It’s a great way to enjoy soju if you’re not a fan of drinking it directly. Also, it’s so easy to make big jug of it!
Ingredients
- 5 oz pineapple juice
- 2.5 oz soju
- 2.5 oz soda water
- Ice

Pineapple Juice
Pineapple juice is super high in vitamin c and bromelain, making it a pretty healthy juice option to add into a fun drink. This is the perfect amount of sweet and sour for this refreshing cocktail. No wonder Koreans love this drink! You can squeeze fresh pineapple juice, or you can get the bottled juice at the supermarket. Today, I’m using Woongjin’s probiotic pineapple-yogurt drink as my base. But, you can also switch things up with a different type of juice, like apple, cranberry, orange, or more.

Soju
Soju is a Korean distilled wine that’s around 12-20% alcohol. It’s a popular drink in Korea that can be made from rice, potato, tapioca, or wheat. The flavor is clean, smooth, and slightly sweet. You can drink it alone chilled, or in a cocktail like in this recipe. It also comes in a variety of fruity flavors at the supermarket. Did you know that this rice wine not just great for a yummy drink, but is also an ingredient I use sometimes with pork dishes? Adding soju to the cooking process reduces gamey flavor.

Instructions
- Fill a tall glass completely with ice.
- Pour in 5 oz pineapple juice.
- Add 2.5 oz soju.
- Top with 2.5 oz soda water.
- Gently stir once or twice to combine without flattening the bubbles.

Ingredients
- 5 oz pineapple juice
- 2.5 oz soju
- 2.5 oz soda water or lemon lime soda
- Ice
Instructions
- Fill a tall glass completely with ice.
- Pour in 5 oz pineapple juice.

- Add 2.5 oz soju.

- Top with 2.5 oz soda water.

- Gently stir once or twice to combine without flattening the bubbles.

Notes
- Add a pineapple wedge or mint for aroma.
- Squeeze in a small splash of lime if you want it less sweet.
