If you ever wonder how Chinese Restaurant Stir-Fried Garlic Green Beans is crispy on the outside and crunchy on the inside, I am here to share the secret!
Many vegetable stir-fry dishes in Chinese restaurants are deep-fried to cook/blanch the vegetable while keeping its freshness quickly.
This technique is known as “bao” which translates to quick explode cooking. It is also done quickly, so the oil doesn’t seep in and sog up the vegetable.
To deep-fry the Chinese Stir-Fried Garlic Green Beans, I recommend using either a small shallow pot or narrow bottom wok, so you don’t need to use as much oil.
I use only ¼ – ½ cup of oil, and for the remaining oil, I will strain and reuse it once it cools down.
I recommend frying the green bean in batches around 30 seconds – 1 minute on each side. Let them rest on a paper towel to prevent the green beans from becoming soggy.
There are many ways to spice up Stir-Fried Garlic Style Green Beans.
You can add red chili flakes or spicy douban sauce (Chinese fermented bean paste) to add a kick.
And if you like to add in protein, grounded pork and chicken are great options. Season the grounded meat with soy sauce and a pinch of sugar before adding in the green beans.
