Cook your favorite noodle according to package instructions, rinse with cold water, and set aside.
Slice your cucumber and carrot toppings into thin strips and shred the cooked chicken.
Mix sesame paste, sugar, peanut butter, and black vinegar. Slowly add in hot noodle water until it becomes a smooth runny consistency. I added around 4 tbsp but add until it reached your desire consistency.
To put it together, start with noodles, add in all your preferred toppings (shredded chicken, cucumber, carrots, eggs, etc), drizzle on sesame sauce and homemade chili oil. Garnish with green onion and enjoy!
