Eating Summer Cold Noodles For A Whole Week

This week is so hot, i basically I ate cold noodles every day! I think the only way to help us survive is refreshing summer recipes! Noodle soups are nice, but in the summer, nothing beats a cold slurp of saucy noodles.

Growing up in Taiwan where it was 38ยฐ every summer, one thing that always cooled me down was creamy sesame noodles. You need to try this noodle recipe: spicy, creamy, and super easy! With both the roasted sesame seeds and peanut butter, the sauce is super nutty and addicting.

Leftover Chicken For Shredded Chicken Sesame Noodles

Cold noodles are so easy to make and customize with anything you have in the fridge. I like pairing my cold noodles with 1 protein and at least 2 refreshing, crunchy veggies.

Normally, one of my favorite toppings to add is shredded eggs. Today, I don’t have a lot of time, but I do have leftover rotisserie chicken. I shredded up what I had, and added it right on top. I also added cucumbers, carrots, and roasted peanuts for some crunch and aroma. Just like that, lunch is served!

Chicken Sesame Noodles Ingredients

  • 2 servings noodles (qq or hand cut)
  • 2 tbsp sesame paste
  • 1 tbsp peanut butter
  • 0.5 tbsp roasted sesame seed grounded
  • 3-4 tbsp hot noodle water or until it becomes creamy consistency that you like
  • 1.5 tbsp soy sauce
  • 1 tbsp black vinegar
  • Chili oil to your own spice level
  1. Cook your favorite noodle according to package instructions, rinse with cold water, and set aside.
  2. Slice your cucumber and carrot toppings into thin strips and shred the cooked chicken.
  3. Mix sesame paste, sugar, peanut butter, and black vinegar. Slowly add in hot noodle water until it becomes a smooth runny consistency. I added around 4 tbsp but add until it reached your desire consistency.
  4. To put it together, start with noodles, add in all your preferred toppings (shredded chicken, cucumber, carrots, and eggs), drizzle on sesame sauce and homemade chili oil. Garnish with green onion and enjoy!
