There’s something about warm weather and sunshine that makes me crave fresh vibrant salads just like this Wasabi Soy Crab Salad. I find the colorful sweet bell peppers and crunchy cucumbers just irresistible. Combined with the slightly briny imitation crab, this salad is sweet, savory, and super refreshing!
Plus, this crab salad is just so easy to make, it takes only 5 minutes. Just prep ingredients, mix dressing, and serve.

Celebrating Dad’s Birthday with Korean BBQ
For my dad’s birthday this week, he specifically said he didn’t want to do anything like gifts or birthday cakes. Instead, we planned a very very chill Korean BBQ day with the family. It’s his favorite feast! I made a ton of delicious side dishes, like spicy cucumbers, bean sprouts, spinach salad, and braised quail eggs.

Cooking With Imitation Crab
Today, we’re using imitation crab, also called kani for our crab salad. You can use any brand of imitation crab, and you can usually find them in the frozen or refrigerated seafood section. If frozen, make sure to defrost the package fully according to the package instructions. I like to drain or pat the liquid dry from the package before using them.
If you do have real crab meat, you can replace that with the imitation crab in this recipe for a much more decadent salad! For a more vegetarian option, I like to use tofu or mushroom instead.

Crab Pepper Salad Ingredients
- 3ย bell peppers
- 1ย cucumber
- 1ย packย imitation crab meatย 227 g or 8 oz
- 2ย tbspย Rice Vinegarย or Sushi Seasoning
- 1ย tbspย Soy Sauce
- 1ย tbspย any sweetener of your choice
- 1ย tspย Sesame Oil
- 1/2ย tspย Mustardย to taste
- 1/4ย tspย Wasabiย to taste
- 2ย tbspย Roasted Sesame Seedsย ground

How To Make Wasabi Soy Crab Salad
- Slice and prep all of your vegetables.
- Shred all the imitation crab and set aside.
- Mix rice vinegar, soy sauce, sweetener, sesame oil, mustard, wasabi, and sesame seeds.
- Add sliced vegetables and imitation crab to a mixing bowl.
- Drizzle in the sauce and mix well.
