A Meal In One Pot: Easy Salmon And Rice

This One-Pot Salmon and Rice recipe is a great way to get your proteins, veggies, and rice all in one dish! It’s super easy to make – and easy to eat! Flaky salmon, crunchy cabbage, and umami-packed rice makes for a satisfying meal anytime – especially coming home from a day of work. Salmon: Perfect For One Pot Meals

I love using Salmon for One-Pot Recipes! It flakes perfectly so you don’t have to do any additional cutting after cooking, just mix and eat. You can try other types of fish with this recipe as well, but you may have to adjust the cooking time.

Salmon is an excellent source of protein and rich in Omega-3 Fatty Acids. With this recipe, the salmon’s fattiness helps it stay moist and flaky in the rice. I am using fresh filets today. Frozen filets are fine too, but make sure to defrost frozen ones before cooking.

Make This Salmon and Rice You Own!

The great thing about this salmon and rice – it’s so easy to change it up! You can use any vegetables of your choice. Today we’re using cabbage, carrots, and mushrooms. I’ve also tried adding in corn, peas, asparagus, and more…and they all taste good! This one-pot rice is a great way to use up all the leftover ingredients in your fridge.

You can also customize the flavors of this rice. You can use any type of stock of your choice, but I find that chicken or dashi stock tastes the best. We seasoned the salmon today with salt, pepper, and paprika, but it’s really up to you. I’ve used Cajun seasoning for this dish before, and it came out just as amazing! 

Salmon and Rice Ingredients

  • 2 pieces salmon (~6 oz. each – try to get it with no skin or bone so it’s easier to eat)
  • 1 cup mushrooms (I used shiitake and shimeji mushrooms but you can use any of your choice)
  • ¼ cup carrots, sliced
  • 1 cup cabbage, chopped
  • 2 cups rice
  • 2 ½ cups stock of choice (I used dashi stock) 
  • 2 tbsp butter (optional)
  • Salt & pepper to season
  • ½ tbsp paprika
  • Parsley to garnish
  • Lemon juice to finish
  1. Season the salmon with salt, pepper and paprika. You can be generous with the seasoning, especially the salt.
  2. In a medium pot, add in oil and pan fry the salmon for 2 min on each side, or until crust forms. Remove and set aside.
  3. In the same pan, add in butter and vegetables. Saute for 2-3 min.
  4. Add in the rice, mix well – making sure the rice soaks up all the oil. Pour in stock of your choice. Season with salt and pepper if needed, depending on the stock used.
  5. Add back in the salmon, place it on top of the rice. Once simmering, put the lid on. Cover and cook on low heat for 18-20 min. Keep an eye out to prevent burning.
  6. Turn the heat off and let it sit for another 5 min with the lid on. Garnish with parsley and a squeeze of lemon juice and enjoy!
