Whether you’re a busy professional, a student with limited cooking skills, or simply craving a homemade comfort meal, Tomato and Egg Rice is a winner. Let’s dive into how to make this easy tomato and egg rice dish that will leave your taste buds dancing!

Growing up, my dad used to make me Tomato and Egg Noodles or Rice for breakfast all the time.
I know it sounds like an odd combo, but trust me, one this! The sweet and slightly tart tomato pairs perfectly with the egg. Since it takes less than 15 minutes to make Tomato and Egg Rice, it is perfect for breakfast or quick lunch.
In one pot, you can enjoy vegetables, protein, and carbs! Whether enjoyed as a quick weeknight meal or a lazy Sunday brunch, this easy tomato and egg rice recipe is sure to become a favorite in your culinary repertoire. Give it a try and savor the delightful combination of flavors!

The tomatoes in this dish play a dual role.
They bring a burst of bright red to the plate, creating a visually stunning contrast against the golden-yellow scrambled eggs. Beyond aesthetics, the tomatoes contribute a delightful tangy sweetness that complements the savory elements of the dish.
The eggs, masterfully scrambled, create soft and delicate ribbons of protein throughout the dish. Their creaminess envelops each grain of rice, making every bite a textural delight. With just the right amount of soy sauce, the eggs absorb a savory, umami-rich flavor that blends harmoniously with the rice and tomatoes.

In just a few easy steps, you’ve created a delicious tomato and egg rice dish that’s both comforting and satisfying.
You can add other ingredients to Tomato and Egg Rice to customize it to your liking. Other ingredients that I add are mushrooms, hot dogs, spam, and corn.
You can use vegetable broth, chicken stock, and dashi stock. I like dashi stock since it adds umami flavor and the instant dashi stock is affordable and quick to make!

This looks delicious!! Could I ask what recipe card (plug-in) do you use for your site? Thank you
I saw this recipe pop up on youtube, and it looked perfect for a quick and easy weeknight meal. I didn’t have fresh tomatoes, so used a tin of chopped tomatoes and added a bit of chicken stock to account for having less liquid. I also added extra eggs for more protein. The result was a quick and scrumptious dinner for two!
I gotta try this
hi, I’ve just made this and absolutely loved it! it’s perfect, takes next to no time to prepare, and tastes incredible! thank you so much for putting all this out and providing these amazing recipes for us to try, I really appreciate all the effort you’ve put in to this 🙂
hope you have a nice day!
This was really nice and warmed me up from the inside! Next time I make this, I’d opt out the extra pepper for the sauce and just use it to season the eggs because it ended up being very peppery. I only used 3 tomatoes though, so it might’ve been that.
Incredibly delicious and easy. I have made this three times in the past week. It’s addicting!
