Secret To Fluffy Milk Bread is Tangzhong
First, why are homemade Asian bread so fluffy and soft? Asian bread is always soft yet slightly chewy because of Tangzhong, a roux made with flour and water. This keeps the bread extra moist and soft, giving it an extra fluffiness. Adding in Tangzhong guarantees that your Milk Bread will come out perfect every time.
Make sure your Tangzhong is completely cooled down before adding it to the rest of the ingredients. I recommend making it the night before to help you save time.ย

1. Milk Bread AKA Master Dough
I get asked my momโs homemade Milk Bread at least five times a day. It’s my most HIGHLY requested recipe!
Today I am showing you how to make my momโs fluffy, Fail-proof Milk Bread that will blow your mind. Soft, tender, rich, smooth, and super buttery, this homemade Milk Bread recipe is one of my favorite recipes from my mom. Plus, this is the MASTER DOUGH we’ll be using for all the other recipes in this post!

Milk Bread Ingredients
Tangzhong
- 2 tbsp of All Purpose Flour
- ยฝ cup of Water
Milk Bread Dough
- 2 ยฝ cups of All Purpose Flour
- 3 tbsp Sugar
- ยฝ tsp of salt
- 1 tsp of Yeast
- 1 Egg (beaten)
- 60 ml of Milk
- 50 ml of Water
- 2 tbsp of Butter, room temperature
Egg Wash
- 1 Egg Yolk
- 2 tbsp of Milk


2. Marble Chocolate Milk Bread
The best part about making homemade Asian bread at home is that you can customize it to anything you like! I like adding different flavors such as chocolate powder, matcha powder, or beetroot to make flavors of swirled bread. Today, we are making this beautifully marbled chocolate milk bread, which is super delicious as breakfast!

Chocolate Milk Bread Ingredients
Tangzhongย
- 2 tbsp of All Purpose Flour
- ยฝ cup of Water
Milk Bread
- 1 ยผ cups of All Purpose Flour
- 1.5 tbsp Sugar
- ยผ tsp of salt
- ยฝ tsp of active dry Yeast
- ยฝ Egg (beaten)
- 30 ml of Milk
- 25 ml of Water
- 1 tbsp of Butter, room temperature
Chocolate Milk Breadย
- 1 ยผ cups of All Purpose Flour
- 1.5 tbsp Sugar
- ยผ tsp of salt
- ยฝ tsp of active dry Yeast
- ยฝ Egg (beaten)
- 35 ml of Milk
- 30 ml of Water
- 3 tablespoons of coco powder
- 1 tbsp of Butter, room temperature
Egg Wash
- 1 Egg Yolk
- 2 tbsp of Milk


3. Chinese Hot Dog Bunsย
Did anyone else also grow up eating Chinese Hot Dog Buns? My mom used to make Chinese Hot Dog Buns for me all the time for school for breakfast, and it is still one of my favorite Asian bun recipes. Hot dog wrapped in fluffy and soft milk bread, what is there not to love about Chinese Hot Dog Buns?

Sausage Hot Dog Ingredientsย
- 2 ยฝ cup (360 g) All Purpose flour
- 3 tablespoons (36 g) sugar
- ยฝ teaspoon salt
- 1 teaspoon active dry yeast
- 50 g water
- 1 egg
- 60 g milk
- 2 tablespoons butter, room temperature
- 8 hot dogsย
Tang Zhong
- 2 tablespoons (16g) All Purpose flour
- ยฝ cup (114 g) water
Egg Wash
- 1 egg yolk
- 1 tablespoon milk

Made with a base ofย my mom’s famous Asian Milk Bread, this Cheesy Tuna Bun tastes just like the Asian bakeries. With a simple topping ofย corn, tuna, mayo, and cheese,ย this tuna bun is cheesy, savory, and sweet.

Creamy Tuna Bun Ingredientsย
- 2 ยฝ cup (360 g) All Purpose flour
- 3 tablespoons (36 g) sugar
- ยฝ teaspoon salt
- 1 teaspoon active dry yeast
- 50 g water
- 1 egg
- 60 g milk
- 2 tablespoons butter, room temperatureย
Creamy Tunaย Mix
- 1 can of tuna (170g), drain
- ยผ cup of corn
- ยผ cup of mayo
- Black pepper to taste
- 1 cup of shredded cheese
Tang Zhongย
- 2 tablespoons (16g) All Purpose flour

Egg Wash
- 1 egg yolk

Hello! I used All Purpose Flour and dry active yeast for all the recipes
For the chocolate toast, do you make twice as much tangzhong or do you divide the listed amount in half so that both the milk and chocolate doughs have tangzhong?
I divided the listed amount an half for each dough!
Do you have the flour measurements weight instead of cups?

is the 50 ml of Water in the bread a must? i added water and the dough is really sticky, unlike the one in your video. i saw in your video you didnt add water in the dough. you only used water in tangzhong
