1 small yellow onion, thinly sliced
1 tbsp butter
1 cup of shredded cheddar
1 cup of shredded Monterey Jack cheese
3 green onions, thinly sliced
Pickled jalapeños, optional
Tostitos® Medium Salsa (418 mL), for serving

Fried Cheese Curds:
8 oz (227 g) cold cheese curds
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp salt
Neutral oil, for frying

Mustard Cheese Sauce:
3/4 cup evaporated milk
¾ cups of shredded cheddar
¾ cups of Monterey Jack cheese
1 1/2 tsp cornstarch
1 tbsp Dijon mustard
1 tsp yellow mustard

Instructions:
Set up three bowls with flour, beaten eggs, and panko mixed with garlic powder, paprika and salt

Coat each individual cheese curd in flour, egg, and panko. Freeze for 20–30 minutes

Brown the bratwurst in a skillet over medium-high heat for 3–4 minutes. Remove from the pan

Add butter and onion; cook 5–7 minutes until the onions are softened

Toss shredded cheese with cornstarch
Warm evaporated milk over medium-low heat

Stir in the cheese until smooth. Mix in Dijon and yellow mustard

Heat 1½–2 inches of oil to 375°F (190°C). Fry cheese curds in batches for about 1 minute until golden, drain and set aside

Preheat oven to 375°F (190°C). Layer Tostitos® tortilla chips, bratwurst mixture, and shredded cheese in an oven-safe pan.
Bake 5–7 minutes until cheese is melted

Top nachos with fried cheese curds, drizzle with mustard cheese sauce, and garnish with green onions and jalapeños.

I’ve always wanted to do something special to hono I’ve always wanted to do something special to honor my dad. Grief is a weird thing. A lot of the time, we think talking about someone less will make the pain hurt less … but after 2.5 years without my dad, I’ve realized it’s the opposite.

Talking about him brings the memories back to life. It helps me notice all the little things in my day that remind me of him.

My Chemo Cravings series was always so special to me. I’ll never forget the messages from people fighting the same battle and how we could find little moments of light and happiness in such a hard time. Now, I’m receiving messages from people grieving and missing someone they love.

Even though my dad isn’t here anymore, sharing his stories and my grief journey feels like that series did during his chemotherapy: a little bit of light in a battle that can feel so dark. And sometimes, that’s all you need.

My dad, Tony, was always someone who could bring light to any hard situation. So here’s my new series: Tony’s Cravings :)

P.S. Comment NOODLES and I’ll DM you the recipe!
