What I Eat In A Day – Milk Toast and K-drama Tteokbokki

Today, I’m feeling a bit low energy from my period, and need some easy, low effort recipes that curb my cravings: both sweet and spicy. So, let me show you exactly what I eat in a day to keep me satiated and energized. I start the morning off with a Creamy Fresh Berry Milk Toast to curb my sweet cravings. Then, a K-drama inspired lunch of Spicy Cheesy Tteokbokki and Fish Cake Soup, followed by an afternoon snack. I end my day with a 10 minute, super satisfying hot and sour dumpling soup.

Breakfast: Milk Toast with Fresh Berries

I was craving something sweet and fluffy when I woke up today. I bake every Sunday, so I took a slice of my freshly baked milk bread and whipped up something that satisfies my sweet tooth: Creamy Milk Toast. This bread is my mom’s signature homemade milk bread recipe that I’ve loved growing up. Plus, it’s NO MACHINE NEEDED! I’ve got some tart fresh berries in the fridge that perfectly compliments the sweet and creamy bread, so I added them on top.

To make an easy Creamy Milk Toast with Berries, just follow these simple steps:

  1. Soak a slice of milk bread with some milk.
  2. Melt butter in the pan and toast the milk bread until golden brown.
  3. Top with fresh fruit and drizzle with honey.
  4. Optional: Sprinkle with a little powdered sugar.

Milk Bread Ingredients

TANGZHONG: 
  • 2 tbsp of All Purpose Flour 
  • ยฝ cup of Water 
BREAD: 
  • 2 ยฝ cups of All Purpose Flour 
  • 3 tbsp Sugar 
  • ยฝ tsp of salt 
  • 1 tsp of Yeast 
  • 1 Egg (beaten)
  • 60 ml of Milk 
  • 50 ml of Water 
  • 2 tbsp of Butter, room temperature  
EGG WASH: 
  • 1 Egg Yolk 
  • 2 tbsp of Milk 

Lunch: K-drama Inspired Tteokbokki and Fish Cake Soup

I’ve been rewatching Business Proposal, and seeing Ha-ri and Yeong-Seo chowing down on tteokbokki while hanging out has really triggered a need for spicy rice cakes. For lunch, I made an easy Fish Cake Skewer Soup with my 20 minute Spicy Cheesy Tteokbokki. This combo really hits the spot – and totally curbs my spicy cravings too!

I used pre-skewered fish cakes for my soup today, but you can also buy fish cake sheets and skewer them yourself. You can usually find them in the Frozen section of your local Asian supermarket. The light broth is such a nice palette cleanser paired with the saucy, cheesy spicy rice cakes. Today, I made my own homemade dashi stock from scratch with dried kelp, anchovy, and dry shrimp.ย ย 

Fish Cake Soup Ingredients

  • 6 fishcake sheet skewers
  • ยฝ onion 
  • 1 whole daikon or Korean radish, peeled and cut into big chunks 
  • 2 green onion, cut into 2-inch pieces  
  • 1 tbsp fish sauceย 
  • Salt and pepper to taste 
  • 1 tbsp soy sauceย 
  • 6 cups of dashi stock
  1. If you are using the sheets, skewer the fish cakes. Soak the fish cake sheets in water for 5 minutes; once they are softer and more accessible to bend, skewer them layer by layer. 
  2. In a pot, add onion, green onion, soy sauce, fish sauce, dashi stock, and daikon. Bring it to a simmer, and cook on medium heat uncovered for 20-30 minutes or until daikon is soft.ย 
  3. Optional: strain the soup and only keep the daikon. 
  4. Add in the fish cake, and cook for 10 minutes. Garnish with green onion, and enjoy!

Spicy Cheesy Korean Rice Cakes Ingredients

  • ยฝ Onion sliced (optional)
  • ยผ Cabbage sliced 
  • 2 Green Onion โ€“ 2-inch pieces 
  • 3 cups of Frozen Rice Cake 
  • 2 cups of Dashi Stock or Vegetable Stock 
  • 1.5-2 tbsp of Gochujang
  • 1 tbsp of Soy Sauce 
  • 0.5 tbsp of Sugar 
  • 1 tablespoon minced Garlic
  • 3 tsp of Korean Chilli Flakes
  • 1 tablespoon Honey
  • 1 tsp black pepper (optional)
  • 1 cup of Mozzarella Cheese 
  • 1 cup fish cakes (optional)

Afternoon Snack: Ambrosia Apple & A Book

In the afternoon, I took a break and charged up with an Ambrosia apple and a book. Sometimes, on those busy days, biting into an apple is the most refreshing healthy snack. I’ve been so obsessed with Ambrosia apples. They’re sweet like honey, and SUPER CRISP!

Dinner: Easy Hot And Sour Dumplings

I’ve been working hard all day, so I wanted to wind down with a steaming bowl of hot and sour dumpling soup. I love having soup for dinner when I’m on my period. It calms down my cramps and relaxes my body, especially after a day of work.

This 10 minute dumpling soup recipe is perfect for dinner when you’re feeling lazy and low energy like me today. I cooked some pork and chives dumpling I made and froze from my last dumpling day. Instead of using the full soup recipe, I used Kai Dong Mama’s chili oil (Restocking soon!) with some black vinegar, green onion, chicken powder, and some of the dumpling water. It’s so easy to make, and super satisfying!
