I have never been more proud of a recipe than my Cheesy Cabbage Pancake. The Cheesy Cabbage Pancake is crispy, crunchy, fluffy, AND cheesy, with all the best texture in a dish.
Only require a few simple ingredients; if you are a parent and trying to get your kids to eat more vegetables, THIS cheesy cabbage pancake will surely get your kids asking for more!
Taiwanese Cabbage Squares that you find at nightmarkets and Kimchi Pancake inspire my Cheesy Cabbage Pancake.
I wanted to combine the fresh crunchiness from Taiwanese cabbage squares and the crispiness from the kimchi pancake.
This pancake recipe is SO easy that you can make it in less than 20 minutes. All you need is tempura powder, cabbage, potato, and cheese.
You can make the cabbage pancake into one large pancake or small individual cakes. If you have extra cabbage batter, the batter can last in the fridge for 2-3 days.
Two secret ingredients make this Cheesy Cabbage Pancake extra special; the first is tempura powder.
Tempura powder is alot lighter and crispier compared to any pancake batter.
You can easily find them at most grocery stores in the international food aisle, or you can purchase them on Amazon.
Using cold soda water with tempura powder gives the pancake light and crispy texture without becoming over doughy.
The second secret ingredient for my Cheesy Cabbage Pancake is potatoes.
The potato gives more “fullness” to the pancake. Similar to adding Japanese yam to Okonomiyaki, the grated potato makes the pancake extra fluffy.
Adding potato can cut down the amount of powder used, making the potato healthier and softer! Grated potato also cooks faster compared to shredded potato.

Ingredients
- 1 Cup of Tempura Powder
- 1 Large Egg
- ½ cup of COLD Soda Water
- 1 Large Potato (grated)
- ¼ Large Cabbage (chopped ~ 4 cups)
- 1 cup of Shredded Cheese
- Salt and Pepper
- Mix cabbage, shredded cheese, grated potato, tempura powder, egg, and salt and pepper in a bowl.
- Turn the heat to medium, in a non-stick pan, add in oil. Once the pan is hot, add in the cabbage mixture. Spread so it is even and pan-fried for 5-6 minutes on each side.
