Spicy Beef Sauce

This spicy beef noodle stir fry has its signature spicy, meaty flavors thanks to this spicy beef sauce base. Using ground beef and onion as a base for an even bite every time, this sauce starts with a big scoop of Mama’s Chili Oil or any of your favorite chili oil – like my homemade recipe. To give it some extra richness, we add vegetarian oyster sauce, soy sauce, and then some sugar to balance out the saltiness.

You can replace the beef with ground chicken, pork, or tofu and still have a similar spicy, meaty flavor to this chow mein dish!

Sun-dried QQ Noodles

The key to making a tasty stir-fried noodles is actually picking the right type of noodles. I make my noodle stir-fries with kai dong’s QQ noodles because they never get soggy. Even after cooking and sautéing, they stay so bouncy. They’re just the right thickness roll up with the spicy beef sauce and slurp it all up in one bite.

If you don’t have QQ noodles, you can use any other noodles that can withstand a little bit of extra cooking. Sometimes, I use frozen udon instead for an extra thick bite.

    1. Hi Camille, yes, you can use any of your favorite noodles from the grocery store. I’d suggest wheat noodles or yellow egg noodles, but if you really can’t find them, you can also try using your favorite pasta.
