My Instant Pot Soy Chicken recipe came from my mom’s Rice Cooker whole chicken.

Making whole chicken in a rice cooker is a traditional and common household recipe in Taiwan.

I converted it into an Instant Pot version since I know not every household has a rice cooker at home.

My mom used to make Soy Chicken for dinner when I was in high school, and I could smell the chicken before walking into the house.

Savoury, delicious, and one of the best chicken recipes you will ever try.

Instant Pot Soy Chicken is one of the easiest recipes you can make at home.

All you have to do is marinate the chicken overnight and pour everything into the instant pot.

You don’t even need to add water to the instant pot; all you need is the chicken and the marinade.

The flavor is soaked into the chicken while the instant pot slowly pressure cooks it, making it super tender and juicy.

PRO TIP: drizzle the sauce over steamed vegetables and rice for the PERFECT dinner. If you don’t want to discard the sauce, you can freeze it and use it as a marinade next time you make the chicken!

Ingredients 

SHOP THE INGREDIENTS
  1. Marinate the chicken overnight with soy sauce, dark soy sauce, Chinese cooking wine, five-spice powder, smashed garlic, ginger, and honey. 
  2. Thoroughly rub the whole chicken to ensure that even the inside of the chicken is coated in the marinade. Cover with cling wrap, or place the chicken plus the marinate in a plastic bag. Rest in the fridge overnight. 
  3. Pour the chicken and the marinade into the instant pot, and ensure that the breast side is facing up.
  4. Pressure cook for 25 minutes, natural release, and enjoy!

  1. This recipe is so delicious and so easy. The smallest chicken I could find was 4.3 lbs so I added a bit more of each ingredient to the marinade and added one minute to the cook time.
