Minced Beef Egg Rice Ingredients

  • 300 g ground beef
  • ½ small onion finely chopped
  • 2 green onions sliced (white & green parts separated)
  • 2 – 3 eggs
  • 2 cups cooked white rice hot

Cantonese Savory Gravy

To Finish

  • Green parts of green onion
  • Chopped red chili optional

Browned Ground Beef

Ground beef is problably one of the most convenient and affordable proteins at the supermarket. It is high in protein, Iron, Vitamin B12, Zinc, and selenium, all essential nutrients for a healthy circulatory, skeletal, and immune system. It absorbs sauces easily, but still tastes satisfyingly meaty.

The first step to cooking with ground beef is almost always browning. This uses the Maillard reaction to get a deliciously charred flavor. Make sure not to move it around in the pan too much at first, until it starts to brown. Then, break the beef up into smaller pieces and add the chopped onion and green onions.

Velvety Savory Gravy

The soul of this dish is really that velvety, savory gravy that makes this beef dish so good with rice. This mix of soy sauce, oyster sauce, dark soy sauce, white pepper, your favorite sweetener, water, and corn starch creates the perfect sauce for velveting the beef.

As it cooks, the liquids melt the browned beef frond at the bottom of the pan, and the sauce thickens thanks to cornstarch. This gives you that sauce that clings on to each bit of beef, rice, and egg with savory-sweet flavor.

Instructions

  1. Heat a pan over medium-high heat. Add ground beef and sauté 2–3 minutes until mostly cooked.
  2. Add chopped onion and white parts of the green onion. Sauté another 2–3 minutes until fragrant.
  3. Meanwhile, mix soy sauce, oyster sauce, dark soy sauce, white pepper, sweetener of choice, water, and corn starch in a small bowl.
  4. Lower heat to medium. Pour in the eggs, then drizzle the sauce evenly over the beef.
  5. Cover and cook 2–3 minutes, until eggs are your desire doneness.
  6. Finish with green parts of green onions and red chili, and served topped on rice.
