Stir Fry Scallion Chicken (20 Minutes!)
Back with another EASY and DELICIOUS recipe that will be your go-to recipe for quick lunch boxes or last minute dinners: Stir Fry Scallion Chicken. These chicken bites are flavorful, easy to eat, and goes perfectly with a big bowl of rice. You can make this in 20 minutes with simple, easy-to-find ingredients that make this chicken extra tender. Get your rice ready, and don’t say I didn’t warn you about how addicting my Scallion Chicken is!

Ingredients
- 5 chicken thigh boneless with the skin on
- 4 stalk green onion chopped
- 2.5 tablespoon Soy Sauce
- 3 tablespoon oyster sauce
- 1 tablespoon honey
- 1 pinch black pepper
- 1.5 tablespoon cornstarch
- 2 tablespoon Shaoxing Wine optional
Chicken Marinade
Let’s start with the chicken marinade. I used black pepper, oyster sauce, soy sauce, honey, and cornstarch to velvet and marinade the chicken chunks. The cornstarch will help crisp up the chicken and also thicken the sauce.

Chicken Thigh Bites
I prefer to use chicken thighs with the skin on for Scallion Chicken.
Chicken thighs have great flavor and, when deboned, becomes even more tender while also speeding up the cooking time.
It is super easy to debone chicken thighs at home, and it takes an extra 2-3 minutes. Alternatively, you can also get your local butcher shop to prepare it for you.
However, you can also use chicken breast as well. Adjust the cooking time depending on what cut of chicken you are making.

Scallions
The scallion is the star of the dish. You can use spring onion, green onion, or Chinese scallions.
Chop the scallion into thin slices, and separate it with the white and the green. The white part tends to be spicier and tastes delicious when pan-fried with the chicken and oil.
The green part of the scallion cooks super fast, so add it at the end to add a savory and slight sweetness to the chicken.

How To Make Stir Fry Scallion Chicken Bites
- Cut chicken into bite-sized pieces and marinade with soy sauce, oyster sauce, honey, black pepper, and corn starch—massage and set aside for 5 minutes while you prepare the rest of the ingredients.
- Chop green onion and separate it with the whites and the greens.
- In a pan, drizzle in a bit of oil, and turn the heat to medium-high. Add in the chicken thigh and set it for 1 minute before pan-frying for another 4-5 minutes.
- Pour in Shaoxing Wine, beer, or water, and put the lid on to cook for 2 minutes.
- Add in the rest of the green onion, turn the heat to high, and saute on high heat for another 1-2 minutes.

When do you add the onion whites?
at the very last step!
