Today we are making Spicy Garlic Spam Fried Rice, which takes less than 20 minutes to make at home! Savoury, delicious, and super affordable to make at home, Spicy Garlic Spam Fried Rice is the perfect recipe for weeknight dinners.
If you don’t like spicy food, you can also skip the red chili, and it will still be super delicious.

With crispy spam, umami seaweed, and savory sauce, this Spicy Garlic Spam Fried Rice is seriously so delicious.
You don’t need to use any oil when pan-frying spam. Slowly render out the fat from the spam, and oil adds SO MUCH FLAVOUR to the fried rice.
When it comes to roasted seaweed, my personal favorite is the Costco Roasted Seaweed; it is super delicious and has great value.

The sauce is the star of my Spicy Garlic Spam Fried Rice.
Inspired by my Korean Marinated Eggs, this sauce reminds me of Korean BBQ mixed rice dishes. All you need is a few simple ingredients to make the delicious sauce for my Spicy Garlic Spam Fried Rice.
You will need soy sauce, sesame oil, sugar, A LOT of garlic, red chili, and sesame seeds. You can adjust the amount of spice based on the red chili. If you want to get the spice but are scared of spicy food, remove the seeds from the red chili.

Make sure to use COLD COOKED RICE when making Spicy Garlic Spam Fried Rice.
Using COLD, COOKED RICE is the most important of making fried rice. Cold-cooked rice prevents the rice from becoming overcooked and soggy.
My number one hack for making fried rice is storing the rice in reusable plastic bags once the rice has thoroughly cooled down. I add around two portions of rice per bag; not only does this store the rice in a more compact way for your fridge, but this also makes it super easy to break apart the rice.
Store the bags in the fridge overnight; the next day, remove the rice from the bag and you should be able to break the rice apart easily.

Ingredients
- 1 can of Spam, cut into cubes
- 2 green onions, chopped
- 2 eggs
- 4 Cups of Cold Cooked Rice
- 1 cup roasted seaweed
Garlic Sauce
- 2.5 tablespoon soy sauce
- 4-5 cloves garlic, chopped
- 2 Thai red chili, chopped
- 0.5 tablespoon sesame seeds
- 2 tablespoon sesame oil
- 1 tablespoon sugar
- Mix soy sauce, garlic, red chili, sesame seeds, sesame oil, and sugar.
- In a pan, turn the heat to medium-high, and add the chopped spam. No need to add any oil; pan-fry for around 4-5 minutes or until crispy and golden brown.
- Push the spam to the side, and add white parts of the green onion and eggs. Scramble the eggs for around 2-3 minutes.
- Finally, add in the rice, roasted seaweed, and green onion, and drizzle in the sauce. Saute on high heat for another 2-3 minutes.
- Optional, finish off with a fried egg and enjoy!
