Stay-In Date Night Beefy Shepherd’s Pie
Shepherd’s pie is one of those classic hearty comfort dishes that feels perfect for a cozy night in. Typically, a Shepherd’s pie is made with a layer of hearty ground meat and vegetables, topped with a thick layer of creamy mashed potatoes. Traditionally made with ground lamb, it’s a humble, hearty bake that’s meant to be filling, simple, and satisfying.
We made this beef version as a super cozy winter date night meal at home. For us, the perfect date night is cooking something warm and comforting, throw on our favorite shows, and enjoying both in our most comfy clothes. It’s familiar, simple, and exactly the kind of labor-of-love dish that makes staying in feel just as special as going out.
Shepherd’s Pie Ingredients
Savory Beef Filling
- 1 onion chopped
- 3 carrots Small, chopped
- 2 Stalks celery chopped
- 2 lb ground beef or ground lamb
- 2-3 tbsp tomato paste
- 1 tbsp minced garlic
- 1 tsp rosemary dried
- 1 tsp oregano
- Salt & pepper
- 1 tbsp flour
- 2 Sprigs fresh rosemary
- 2 bay leaves
- 1 cup beef broth
- 1 tsp Worcestershire Sauce
- 1 cup peas
Golden Potato Crust
- 5-6 potatoes Medium, about 2 lb
- 5 tbsp butter
- 1/2 cup heavy cream
- 3/4 cup shredded cheese
- 1 tsp salt or to taste
- 2 egg yolks
- Chopped chives optional, for garnish

Savory ground meat Filling
The super savory ground meat and veggie filling is rich, fragrant, and just the right amount of saucy. The filling starts with browned ground beef or lamb. Traditional Shepherd’s Pie uses ground lamb. But today, ground beef is a lot more accessible. It’s sauteed with onion, celery, peas and carrots and cooked down to add sweetness and texture. The tomato paste, garlic, rosemary, and oregano builds out that herby, savory base. I’m also adding a small amount of flour, which helps the sauce thicken and hold together as it simmers. Beef stock adds extra beefy depth, giving the filling a rich, well-balanced flavor that bakes up hearty and saucy under the mashed potatoes.

Golden Mashed Potato Crust
I feel like potatoes are often overlooked, but honestly, that creamy, buttery golden mashed potato crust is my favorite part of the Shepherd’s Pie. With heavy cream and butter, this mashed potato layer is extra, extra creamy! For a beautiful golden bake, I also added 2 egg yolks and some shredded cheese. After layering the mashed potatoes, I like to use my fork to create a wavy pattern for those beautiful crispy edges.

How To Make Shepherd’s Pie
- Preheat the oven to 400°F (205°C).
- Brown the meat in a large pan over medium-high heat, breaking it up until no pink remains.
- Add the onion, celery, and carrots. Cook for about 5 minutes, until softened.
- Stir in the tomato paste, garlic, rosemary, oregano, salt, and pepper. Cook for 1 minute.
- Sprinkle in the flour and stir until evenly coated.
- Pour in the beef stock and bring to a gentle simmer.
- Add the rosemary sprig and bay leaf. Cover and simmer on medium-low heat for around 20 minutes.
- Meanwhile, add the potato chunks to boiling salted water. Cook for 12–15 minutes, until fork-tender. Drain well.
- Mash the potatoes with butter and heavy cream until smooth.
- Stir in the cheese, salt, and egg yolk.
- Once the beef is rich and saucy, remove the bay leaf and rosemary. Stir in Worcestershire sauce and fold in the peas.
- Spread the beef mixture evenly into a baking dish.
- Top with the mashed potatoes and use a fork to create texture on the surface.
- Bake uncovered for 25 minutes, until golden and lightly crisp on top.
