Lentil Soup: A Life Hack For Sneaking Veggies

This week, I‘m sharing a week of marathon training recipes that are not only healthy, but really helped me refuel myself in the process of preparing for my race. It’s pouring rain outside. So for dinner, I want to make some hot soup. There’s something about rain, a good book, and soup that just seems like the perfect combo. I really think soup is the ultimate life hack when it comes to healthy cooking. Whenever I’m trying to sneak in extra protein and fiber, soup is always my go-to.

Lately, I’ve been obsessed with this lentil soup. It is so easy to make at home, and it’s packed with so much protein. It is literally magic. I swear once everything is blended into that cozy hot bowl, you don’t even realize how much veggie you just ate. Since Dom is always hungry at night, I love making this in big batches so that we can just heat up a bowl whenever he is craving something yummy. Honestly, what is better than a hot bowl of soup and TV at night? You can leave this soup chunky, or blend it up like I did for that smooth, silky texture that’s so easy to sip.

Lentil Soup Ingredients

  • 1 potato chopped into bite-sized chunks
  • 2 carrots chopped into bite-sized chunks
  • 1 onion diced
  • 1/2 tbsp oil
  • 1.5-2 cups dry red lentils washed
  • 1 tsp minced garlic
  • 1 tsp smoked paprika
  • 1/2 tbsp garlic powder
  • 1 tsp smoked salt
  • 1/2 tbsp cumin
  • 1 tsp sweet curry powder
  • 6-7 cups Chicken Broth or Vegetable Broth
  • Salt and Pepper to taste

Garnishes

  • croutons
  • red pepper flakes
  • chopped parsley
  • 1 slice lemon

Red Lentils

The star of this soup is the dried red lentils. Lentils are definitely a superfood, because they’re high in both fiber and protein. They also contain tons of iron and folate, which is great for your brain and metabolism. As a carb, they also have a lower glycemic index than pasta, rice, or bread, so you can stay full for longer, but not have a carb crash. It’s the perfect food for my marathon training!

Compared to the green and brown lentils, red lentils already have their thick hull removed. So, it’s a lot easier to cook, and a lot easier to digest. Before cooking, make sure to rinse the lentils first! Once the water runs clear, they’re ready to use!

How To Make Lentil Soup

  1. In a pot, heat oil on medium high and saute the potatoes, onion, and carrots for 3-4 minutes
  2. Add dried red lentils, minced garlic, smoked paprika, garlic powder, smoked salt, cumin, and sweet curry powder, saute for another 1-2 minutes.
  3. Pour in chicken or vegetable broth and bring to a simmer.
  4. Simmer for 20-25 minutes, or until lentils are tender.
  5. Optional: Blend soup until smooth.
  6. Season the soup with salt and pepper to taste.
  7. Garnish with croutons, Red pepper flakes, chopped parsley, and a squeeze of lemon before serving.
