What I Eat In A Day: K-drama & Restocking Dumplings!
Get back into routine with me as I show you what I eat in a day while I unpack and restock! I’m back from my Taiwan trip, and I’m so eager to get back into my routine! I’m excited to be cuddling with the cats, and having K-drama marathons in the comfort of my own home. Today, I’m eating a day full of foods that welcome me home – from Taiwanese Dan Bing, Korean Soft Tofu Stew, to homemade dumplings.
- Breakfast: Dan Bing – Traditional Taiwanese Egg Crepe
- Lunch: Sundubu Jjigae – Korean Soft Tofu Stew
- Dinner: Dumpling Dinner and Freezer Restock
Traditional Taiwanese Egg Crepe Breakfast
After a morning run, I wanted to make myself Taiwanese Dan Bing 蛋餅, or Egg Crepes, to remind me of all the yummy breakfasts I got to eat there. Even if I just came back, Taiwanese breakfast still hits the spot! This Dan Bing recipe takes only 15 minutes, so you can have breakfast in no time!
You can enjoy these Egg Crepes on its own with just green onions and egg, but my personal favorite is cheese, ham, sweet corn, and pork floss. You can also add tuna, Japanese mayo, basil, or Chinese doughnut. It’s really a choose-your-own-adventure.

Taiwanese Egg Crepe Ingredients
- 4 tbsp of Flour or Cake Flour
- 2 tbsp of Sweet Potato Starch/Tapioca Starch ** use this brand*
- ½ cup of Water
- 1 tsp of Salt
- 1 tsp of White Pepper
- Green Onion
- 2 Eggs
- Your Favorite Toppings

Sundubu Jjigae Lunch Goes Best With K-drama
I’ve been so obsessed with this K-drama called “Lovely Runner”, but whenever I get really into a K-drama, I start craving Korean food. I happened to have some soft tofu in the fridge, so I figured for lunch, why not make Korean spicy tofu stew? It only takes 20 minutes!

I don’t think i can ever resist slurping up that jiggly tofu! The tofu soaks up all the spicy stew’s flavor. You don’t have to add in pork belly, but the oil from the pork belly really does adds to the richness of the broth. With a bit of rice, it’s so delicious! You can also customize this dish using seafood, beef, mushrooms, and other ingredients.
What is everyone’s favorite K drama lately?

Korean Soft Tofu Stew Ingredients
- 1 pack of Soft/Silken Tofu (12 oz)
- ¼ Onion (chopped)
- 1.5 – 2 tbsp of Korean Red Chili Flakes (adjust to your spice tolerance)
- 1.5 tbsp of Soy Sauce
- 3 cloves of Garlic (minced)
- 3 stalks of Green Onion (chopped and separated with white and green)
- 2.5 oz of Pork Belly or Beef (sliced and optional)
- 2 cups of Anochvy or Dashi stock (vegetarian, chicken, or beef stock also works)
- 4 Fresh Shiitake Mushroom (sliced)
- 1 pack of Enoki Mushrooms
- 1 Egg

Dumpling Dinner and Freezer Restock
For dinner I am bulk wrapping dumplings and potstickers. I know it’s so much easier to buy them prepared, but trust me! Homemade dumplings are so yummy, and so worth it. Plus they’ll actually save you so much time whenever you don’t know what to eat!

My go-to fillings are the classic chives and pork dumplings. If you’re not a fan of pork, you can also use ground chicken for this recipe, too!
Quick tip when it comes to making chive dumplings: pour sesame oil all over the chives! This prevent the chives from getting bitter, and helps ensure its vibrant color. My go-to ratio of chives to meat is 2 to 1. It may seem like a lot of chives, but when it’s well mixed it will be the perfect ratio.

I’m also making some potstickers with a cabbage and pork filling. To ensure the potstickers stay nice and crispy, we’re use salt to draw out the moisture of the cabbage.

- 1 lb of Chives (Chopped)
- 2 tbsp of Sesame Oil
- 1.5 lb Ground Pork or Chicken
- 2 tbsp of Oyster Sauce
- 2 tbsp of Soy Sauce
- 1 tbsp of Ginger
- 1 tsp of Salt
- 1 tsp of Chicken Powder
- 1 tsp of White Pepper
- 50 Dumpling Wrappers

- 1 cup HOT Water
- 1 cup Cold Water

- 1.5 lb Ground Beef

- 3 tbsp Ginger Grated
