The EASIEST 15 Minute Breakfast that you need to try this weekend!
If you never tried Classic Taiwanese Green Onion Crepe – Dan Bing, you are missing out. Dan Bing is slightly crispy on the outside and chewy on the inside.
You can wrap any ingredients inside the crepe, such as ham, corn, cheese, basil, and even Chinese donuts!
Here is my mom’s authentic fail-proof recipe that is super easy to make at home.
In Taiwan, we take breakfast VERY SERIOUSLY, and the most popular breakfast dish is Dan Bing.
Dan Bing is translated to “egg pancake,” like a green onion pancake; Dan Bing is thinner, chewier, and paired with eggs.
There is much pre-made frozen egg roll pancake you can get in stores, but I love making it for scratch as it is easy and also super affordable to make.
WARNING, like crepes and pancakes, it takes a little bit of practice to make the perfect Dan Bing.
Make sure to use a non-stick pan to prevent the batter from sticking. My number one tip when it comes to Dan Bing is to be patient.
Tapioca Starch/ Sweet Potato Flour is STICKY until fully cooked, so when flipping, make sure to be careful so the dan bing doesn’t stick together.
If it is your first time, don’t turn the heat too high and let it sit for longer, so it is easy to handle.
There are many options of filling to add in the Dan Bing.
You can enjoy Dan Bing on its own with just green onion and egg. However, my personal favorite is cheese, ham, and sweet corn. Other fillings you can add in are can tuna, Japanese Mayo, basil, or Chinese donuts.
The sauce that I drizzle over my pancake is my Homemade Chilli Oil and Vegetarian Oyster Sauce. If you have never tried vegetarian Oyster Sauce, I highly recommend giving it a try!
It is super flavourful, slightly sweet, and is the perfect dipping sauce for many Asian breakfast dishes such as radish cakes, potstickers, and egg pancakes!

Ingredients (Makes 2)
- 4 tbsp of Flour or Cake Flour
- 2 tbsp of Sweet Potato Starch/Tapioca Starch ** use this brand*
- ½ cup of Water
- 1 tsp of Salt
- 1 tsp of White Pepper
- Green Onion
- 2 Eggs
Toppings:
- Ham
- Cheese
- Corn
- Mix flour, sweet potato flour, water, salt, and white pepper until it is a running consistency, then mix in the chopped green onions.
- In a pan, turn the heat up to medium-high and drizzle in a little bit of oil. Once the pan is hot, pour the pancake mixture in the pan and let it sit for around 2-3 minutes.
- Let it sit for another 1-2 minutes and set aside.
- Drizzle in a little bit more oil and pour in 1 beaten egg, and add back in the pancake
- Let it sit for around 30 seconds – 1 minute or until the egg is stuck to the pancake and flip.
- Roll up the pancake and add in any topping of your choice.
