This fried rice recipe tastes good with EVERYTHING; you can pair it with my Taiwanese Chicken Cutlet, Mapo Tofu, or my Spicy Garlic Cucumber Salad.
You can also add protein such as shrimp, pork, or chicken to this fried rice recipe.
Making fried rice may seem simple, but there is a reason why Din Tai Fung Egg Fried Rice is so famous!
In Taiwan, fried rice is determined “successful” when you can see every grain of rice coated in oil. Finding the perfect balance between a well seasoned fried rice versus over oil can be difficult.
That is why the Din Tai Fung Fried Rice is so famous; it is simple yet flavorful. You can taste the freshness of the ingredients and how they perfectly balance each other.

You might be wondering, why do we need sugar when making Din Tai Fung Egg Fried Rice?
The perfect balance for fried rice in Asian restaurants is a 1:1:0.5 ratio of salt, sugar, and MSG.
The sugar helps balance out the salt, which allows the dish to feel more well-rounded. Rather than using straight MSG, I prefer to use Chicken Powder or Mushroom Powder.
However, keep in mind that Chicken Powder and Mushroom Powder contains salt; therefore, the ratio for salt is lowered to prevent the dish from becoming overly salty.
I’ll be honest, the secret to DELICIOUS Din Tai Fung Egg Fried Rice or any fried rice, in general, is adding a generous amount of OIL.
I season the oil by letting it saute for white parts of the green onion first before adding in the egg.
The more fat you add, the easier it is the “fry” the fried rice, and therefore, it prevents the rice from getting soggy. If you have duck lard at home, it is also a great oil to use.

Ingredients
- 5 cups of Cold Cooked Rice
- 6 chopped Green Onion
- 5 Whole Eggs
- 1-1.5 tbsp of Sugar
- 1.5 tbsp of Chicken Powder
- 1 tbsp of Salt
- 2 tsp of White Pepper
- 1.5 tbsp of Soy Sauce
- 5 tbsp of Oil
- In a bowl, whisk 5 whole eggs with 1 tsp of white pepper and ½ tbsp of salt.
- Turn the heat up to medium-high and add in 5 tbsp of oil. Once the oil is hot, add white parts of the green onion and satue together for 1 minute.
- Add in the eggs, let it set for 30 seconds before breaking the egg apart.
- Add in cold cooked rice and sauté together for 1-2 minutes, separating the rice and ensuring the rice is coated in oil.
- Season with 1-1.5 tbsp of sugar, 1.5 tbsp of chicken powder or mushroom powder, 1 tsp of white pepper, 1.5 tbsp of Soy Sauce, and ½ tbsp of salt. Continue to fry for 1-2 minutes.
- Turn the heat up to high and add in green onion, sauté for 1 minute.

Materials
