Carb Loading with Shrimp Alfredo Pasta

I’m carb loading for a long run tomorrow with this creamy Shrimp Alfredo Pasta! If you’re training for your first ever half marathon, I highly recommend learning what and how to fuel your body best. As someone who loves cooking and learning about food, it’s honestly one of my favorite parts of training.

When you run, your body mainly uses glycogen, or carbs stored in your muscle and liver. When it runs low mid-run, you start feeling really heavy and slow, like your brain and your legs are not communicating. Carb loading is intentionally eating a bit more carbs a day or two before a longer run so to store extra fuel in your body. I honestly learned this the hard way back when I wasn’t taking fuel seriously. I would either end up totally underfueled, feeling really, really sluggish, or worse, dealing with an upset stomach during the run. Now I’m consciously testing different meals and timing because our bodies are always changing.

Lately, my go-to carb load meals I’ve really been loving has been noodle soups like Taiwanese beef noodle soup or yummy pasta dishes like this recipe. It always hits the spot. Let’s be real, if we’re going to be running, we might as well make it fun and eat lots of yummy food along the way. This recipe is super speedy to make, and it’s so easy to have prawns defrosted ahead of time.

Ingredients For Shrimp Alfredo Pasta

  • 150 g Shrimp
  • 1 tsp paprika
  • 1/2 tbsp onion powder
  • 1 tsp oregano
  • 1 tsp smoked salt
  • 1/2 tbsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1.5 tbsp oil
  • 1 onion chopped
  • 1.5 cups cream
  • salt and pepper to taste
  • 1/2 cup shredded cheese
  • 2 servings cooked pasta about 300g
  • chopped parsley for garnish

Paprika Garlic Shrimp

Shrimp is one of my favorite proteins to add to meals while marathon training. It’s a lean protein that’s packed full of selenium, astaxanthin, iron, and vitamin B12, all nutrients and antioxidants you need to boost your metabolism and recover after a long run. The best part? It’s always in my freezer, and cooks so fast.

I’m marinating the shrimp in a paprika-garlic spice mix of paprika, onion powder, oregano, smoked salt, garlic powder, salt, pepper, and oil today to make sure that every bite of shrimp is packed with flavor. Cooking them separately also gives it that slight crust that makes it even more yummy!

Cheesy Alfredo Sauce

This Cheesy Alfredo Sauce makes this pasta dish extra comforting, and only takes a few easy ingredients. Made with a base of sauteed onions, cream, shredded cheese, salt, and pepper, this sauce is creamy, savory, and actually so easy to make. The best shredded cheese I’d suggest are Parmesan, mozzarella, white cheddar, or provolone!

If your Alfredo sauce gets a little too thick for your liking, you can always add a little splash of the water from cooking pasta. The starch in the water will help the sauce loosen and bind together.

Easy Steps For Prawn Alfredo Pasta

  1. In a bowl, mix together shrimp, paprika, onion powder, oregano, smoked salt, garlic powder, salt, pepper, and oil until evenly coated.
  2. Pan fry the shrimp on medium high for 1-2 minutes per side until 90% cooked, remove and set aside.
  3. In the same pan, saute onions for 3-4 minutes until soft and translucent.
  4. Lower to medium-low heat, and add in cream. Bring to a gentle simmer for 2-3 minutes, then stir in salt, pepper, and shredded cheese. Cook for another 2-3 minutes until the cheese melts and sauce thickened.
  5. Add in cooked pasta and shrimp, toss for 1-2 minutes until evenly coated.
  6. Garnish with chopped parsley and serve.
