Easy Mango Salsa For Summer!

Whenever mangoes are in season, I crave this super fresh Mango Salsa for every meal. This colorful, fruity mix takes advantage of ripe mango’s sweetness to add a tropical twist to any savory meal, like my Soy Glazed Salmon! It’s chunky, tart, and just the right amount of heat. Enjoy it as anything from a quick side salad to a dippable snack with chips. Trust me, this salsa will be the winning condiment for your next summer barbecue!

Super Refreshing Summer Mango Salsa

I love making this mango salsa whenever it’s mango season in Canada. Fresh mangos are everywhere in Taiwan, but it’s often eaten alone or with desserts. So, when I discovered Mexican-inspired mango salsa in fish tacos and other seafood dishes served in restaurants in Canada, I was shocked we didn’t think of it first! Now, it’s definitely a summer must-have for me!

It’s the ultimate side dish: paired with seafood, enjoyed as a quick salad, or simply eaten with chips as a snack. Keep this in your fridge, and you can have this ultimate summer side dish anytime. The juiciness and freshness of ripe mango adds such a delicious sweetness, balanced out with the sourness of the lime juice and the spiciness of jalapeños. In the summer heat, there’s nothing that stimulates your appetite more than a little acidity and spiciness. On days when I’m just a little bored with my usuals, adding this salsa makes everything fresh again.

Mango Salsa Ingredients

  • 2 cups chopped ripe mango
  • 1 red bell pepper finely chopped
  • 1 cup cucumber finely chopped
  • ¼ red onion finely chopped
  • ¼ cup cilantro chopped
  • 1 jalapeño finely chopped, optional

For the sauce:

  • Lime Juice 1 lime, or about 2-3 tbsp
  • 0.5 tablespoon honey
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Extra Veggies To Add

Today’s mango salsa uses cucumbers, tomatoes, red onions, jalapeños, and cilantro. But, you can add extra veggies to switch it up as well. Here are a few options I’d suggest:

  • Black Beans: mix in for extra protein, fiber, and heartiness
  • Avocado: chop in for extra creaminess
  • Bell Pepper: you can add red ones for extra color and sweetness, or replace jalapeños with the green bell peppers if you don’t like spicy
  • Pineapple: double the tropical sweetness!
  • Corn: adds a fun crunch as well as extra fiber! Use raw corn for a sweet pop, or grilled corn for an extra smoky flavor

How To Make Mango Salsa

  1. In a large bowl, add the chopped mango, red bell pepper, cucumber, red onion, cilantro, and jalapeño if using.
  2. In a small bowl, whisk together lime juice, honey, olive oil, salt, and black pepper until combined.
  3. Pour the sauce over the salsa and toss everything together until evenly mixed.
  4. Let it sit for 10 minutes before serving so all the flavors can come together.
  5. Serve with tortilla chips, grilled fish, shrimp tacos, chicken, or rice bowls

What To Eat with Mango Salsa

Mango salsa’s sweet, spicy, and tart flavors makes it great for adding contrast to different savory foods. Here are some delicious things to pair with mango salsa that doubles the tastiness!

  • Grilled Meat: the charred, savory flavors of freshly grilled meats can be cooled down by the salsa. The tart flavors make the rich, meaty flavor feel less filling, so you can eat more!
  • Seafood: Seafood like fish, shrimp, and squid can sometimes have very delicate, briny flavors. These are boosted by the bright flavors of the mango and tomatoes, without overpowering it.
  • Chips: The salty, crispy chips like tortilla, potato chips, or my homemade Green Onion Dumpling Chips are delicious when combined with the juicy-sweet flavors of this salsa.
