Gooey One-Pot Sugar Cookie Rice Krispies Treats

I’m having a bit of a difficult week, so I figured I’m going to make one of my favorite childhood desserts: Rice Krispies Treats. There’s something about these chewy squares of sticky puffed rice that just cheers me up right away. With soft center and gooey pockets of melty marshmallow and that bakery-style texture, these treats disappear fast! This is the perfect stress-free treat to give away in your holiday cookie box, or with a hot cup of tea and a book!

The best part of Rice Krispies Treats is how creative you can be! I got some rainbow nonpareil sprinkles today. Plus, I saw a recipe online a few days ago of people using sugar cookies mix to make Rice Krispies a little more fun. So, today we’re making Rainbow Sugar Cookie Rice Krispies!

  • 6 tablespoons unsalted butter
  • 10 cups mini marshmallows divided (8 cups for melting, 2 cups for mixing in)
  • 5½ to 6 cups Rice Krispies cereal
  • 1/2 cup dry sugar cookie mix Do not prepare it. Use dry.
  • 1 teaspoon vanilla extract OPTIONAL
  • 1/4 teaspoon fine sea salt
  • 1/4 to 1/3 cup sprinkles optional
  • Butter or parchment paper for the pan

Rice Krispies

The base of this dessert is of course, Rice Krispies. The airiness of these puffed rice cereal gives these treat a delicate little crunch. You can control the texture of your Rice Krispies Treat by changing the amount of Rice Krispies cereal added to the mix. For softer, extra gooey bars, use 5½ cups of cereal. If you’d prefer a firmer bite, use 6½ cups of cereal.

If you want to switch things up, you can use the chocolate Rice Krispies. Or, you can use a different cereal entirely, like Fruity Pebbles, Cheerios, or more.

For cookie flavored Rice Krispies Treats, we’re adding some Dry Sugar Cookie Mix. This is something I saw online recently and couldn’t wait to try. It turned out so well! Adding cookie mix changes the flavors entirely! It makes the dessert tastes a little richer and a little more creamy. You can also switch up the cookie flavor, just choose a different cookie mix!

Extra Fun Mix-Ins

I’m making these puffed cereal bars extra fun with some mix-ins that make it extra fun! First, I’m mixing in a cup of whole marshmallows. These marshmallows, different from the ones in the melted butter, slightly melt from the heat of the butter. This leaves little gooey pockets of melted marshmallows. If you want really want it EXTRA gooey, add 1 extra cup marshmallows at the end. To add some color, I’m also adding rainbow nonpareil sprinkles. It just makes each bar so much more fun, and adds an extra crunch!

  1. Prep the pan: Line a 9 × 13 inch pan with parchment paper or lightly butter it. Set aside.
  2. Melt butter: Place a large pot over low heat. Add butter and melt gently.
  3. Melt marshmallows: Add 8 cups marshmallows to the melted butter. Stir constantly over low to medium-low heat. Cover with a lid for 30 seconds if melting is slow, then stir again. Continue until the mixture is mostly smooth, glossy and stretchy. Only small soft marshmallow bits remain. Do not let it bubble!
  4. Add sugar cookie mix: With heat still low, sprinkle in the dry sugar cookie mix gradually. Stir continuously for 30 to 45 seconds until fully incorporated and smooth.
  5. Turn off heat and season: Remove the pot from heat. Stir in salt, vanilla extract (optional). Mix for about 10 seconds.
  6. Add cereal: Fold in 5½ to 6 cups cereal gently until just coated. Do not overmix.
  7. Add gooey marshmallows: Fold in the remaining 2 cups marshmallows off heat.
  8. Add sprinkles: Fold sprinkles in last with just a few turns.
  9. Transfer to pan: Scoop mixture into prepared pan. Lightly butter your hands or dampen them (or use parchment paper) and gently press the mixture evenly into the pan. Do not pack it down.
  10. Set and cut: Let rest at room temperature for 20 to 30 minutes. Cut while slightly warm for the softest texture.

Storing Your Rice Krispies

To store your Rice Krispie treats, keep them airtight at room temperature. Skip the fridge. Cold temperatures can cause the marshmallow to firm up and the butter to harden, which means you lose that soft, gooey, oozy texture that makes Rice Krispie treats so good. Refrigerating can also make the cereal feel dense and a little chewy instead of light and crispy. Letting them set and storing them at room temperature keeps the bars fluffy, stretchy, and easy to bite into. They’re best enjoyed within 48 hours, when they’re at their gooey best.
