Crispy Fried Pork Cutlet with Black Pepper Curry
This Black Pepper Curry Katsu recipe is a twist to my regular Katsu Curry recipe I like to make when I want something a little different. Out of all the dishes I make, tonkatsu curry is the one I always come back to. There’s just something about that golden crust and juicy pork that makes it the most satisfying bite with a spoonful of rice.
The Black Pepper Curry is made with caramelized onions and plenty of black pepper, giving it a smoother, sauce-like texture and a gentle heat that pairs perfectly with the richness of the tonkatsu. I first tried a version like this at a Japanese tonkatsu shop, and the flavors really stuck with me. It’s cozy, savory, and simple. If you love tonkatsu curry as much as I do, this version is definitely worth a try.

Black Pepper Katsu Curry Ingredients
Black Pepper Japanese Curry
- 4 onion chopped
- 2 tbsp butter
- 1 tbsp oil
- 1 pack Japanese curry cubes
- 2 tbsp black pepper
- 2 cups water
- Cooked Rice

Tonkatsu – Crispy Fried Pork Cutlet
Tonkatsu, or crispy fried pork cutlet, is my favorite Japanese dish of all time. That golden crust, juicy pork, and a big bite of hot rice always hits the spot. It’s even better with a cozy curry sauce spooned over the top.
I’m extra picky when it comes to getting the pork chop just right. I like to use boneless pork chops with a little fat around the edges to keep them juicy, and I always score the sides to help them cook evenly without curling. For the coating, I use a breaded batter method with panko that fries up super crispy, even hours later.

Black Pepper Japanese Curry
This black pepper curry sauce is more restaurant-style: smooth, rich, and designed to coat the rice and pork without overpowering the tonkatsu. Instead of using chunky vegetables like carrots and potatoes, it builds flavor from caramelized onions and a kick of black pepper. The result is a lighter, more balanced sauce that compliments the crispy, juicy pork.
I love a classic Japanese curry, but when I want the katsu to be the focus, this version just hits different. It still gives you that cozy, savory Japanese curry flavor, with a saucier finish and a little extra heat.

How To Make Black Pepper Katsu Curry
- Start by slicing small cuts through the fat of the pork chop so it doesn’t curl up when frying. Use the back of your knife to gently flatten the pork to help tenderize it, then shape it back with your hands. Season both sides with salt and pepper.
- In a bowl, mix together flour, cold water, and two eggs until smooth. The batter should be thick but still easy to mix. Add more flour or water as needed until it looks right.
- Coat the pork chop in the batter, then press it into panko breadcrumbs. Make sure every part is fully covered. Press it down so the panko sticks really well.
- Heat oil in a pan. Test if it’s ready by dropping in a little panko in the pan. it should float and sizzle in about 5 seconds. Fry the pork chop for 3–4 minutes on each side or until it’s crispy and golden brown. Let it rest on a paper towel.
- In another pan, sauté sliced onions with some oil and butter on medium heat for about 10 minutes or until soft and caramelized.
- Add in 2 tablespoons of black pepper and stir for another minute or two so the flavor blends in.
- Pour in water and bring it to a simmer.
- Once it starts bubbling, mix in your Japanese curry cubes and stir until fully melted.
- Let everything simmer for about 10 minutes, or until the sauce thickens to your liking.
