Welcome to Day 12 of Cooking 15 Street Foods for 15 Days today; we are making one of the most popular Street Foods, Korean Fried Chicken Bites. The chicken is double fried till crispy on the outside and juicy on the inside. The chicken is then tossed in a sweet and spicy glaze that is finger-licking good. Get your soju and ice-cold beers ready because this Korean Fried Chicken Recipe is a MUST TRY.
I’ve been watching ALOT of Korean Dramas, and I noticed that Korean Fried Chicken is in every single show, so I had to remake it.
The key to a good fried chicken is the batter. You don’t want it to be too thick, and you are only eating flour, but you also don’t want it to be too thin, so the chicken dries out. Many Korean Fried Chicken Flours out there are already pre-seasoned, but today we are making our own because I promise you have all of these ingredients at home already.
All you need is flour, corn starch, garlic powder, onion powder, and baking powder. Baking Powder helps ensure the chicken is EXTRA crispy when fried!
Let’s talk about the spicy and sweet glaze that is super addicting. This glaze is delicious and will get your licking your fingers after every bite.
All you need is Korean Red Chili paste, garlic, soy sauce, and honey! For those that can’t handle spicy, you can just use Soy Sauce, Garlic, Honey, and 1 tsp of Sesame Oil to make a Soy Sauce Glaze instead. I love eating the fried chicken on its own, so I also leave half of the fried chicken without any glaze.
I always recommend using Chicken Thigh with the skin on for Korean Fried Chicken Bites as it helps keep the chicken juicy and provides tons of flavor.
Many YouTube videos show how to debone chicken thighs, but you can also go to your local butcher shop or Asian Supermarket (T&T) to get boneless chicken thighs. Alternatively, you can also use chicken thigh on its own or chicken breast. However, dark meat is always the juiciest.

Ingredients
- 2.5 lb of Chicken Thigh (with the skin on)
- 0.5 tsp of Salt
- 1 tsp of Black Pepper
- 2 tbsp of Rice Wine (Optional)
- 4 cloves of Garlic (grated)
- 2 tbsp of Soy Sauce
- 1 cup of Flour
- ½ cup of Corn Starch
- 0.5 tbsp of Onion Powder
- 0.5 tbsp of Garlic Powder
- 1 tsp of Baking Powder
- 1 cup of COLD Water
- 1.5 tbsp of Korean Red Chili Paste
- 4 cloves of Garlic (minced)
- 1 tbsp of Honey
- 0.5 tbsp of Soy Sauce
- 1 tbsp of Sesame Seeds
- Cut chicken into bite-sized pieces and marinate the chicken with 0.5 tsp of salt, 1 tsp of Black Pepper, 2 tbsp of Rice Wine, four cloves of grated garlic, and 2 tbsp of soy sauce. Massage the chicken for 1-2 minutes and let it rest for 30 minutes
- In a bowl, mix flour, corn starch, cold water, garlic powder, baking powder, and onion powder till smooth.
- Add in the marinated chicken thigh and make sure every piece of chicken is coated in the batter.
- In a pan, add in oil; once the oil is hot, add in the chicken thigh and fry for 4-5 minutes or until crispy and golden brown.
- Optional but HIGHLY recommended, double fry the chicken for another 1-2 minutes for the extra crispiness
- In a separate pan, add Korean Red Chili Paste, minced garlic, and 0.5 tbsp of Soy Sauce and turn the heat to medium. Let the sauce simmer for 1 minute before adding in half of the fried chicken. Toss well and garnish with sesame seeds.

Materials
Chicken Marinate
- 2.5 lb of Chicken Thigh with the skin on
- 0.5 tsp of Salt
- 1 tsp of Black Pepper
- 2 tbsp of Rice Wine Optional
- 4 cloves of Garlic grated
- 2 tbsp of Soy Sauce
Fry Chicken Batter
- 1 cup of Flour
- ½ cup of Corn Starch
- 0.5 tbsp of Onion Powder
- 0.5 tbsp of Garlic Powder
- 1 tsp of Baking Powder
- 1 cup of COLD Water

- 1.5 tbsp of Korean Red Chili Paste
- 4 cloves of Garlic minced
- 1 tbsp of Honey
- 0.5 tbsp of Soy Sauce
- 1 tbsp of Sesame Seeds

Omg. This recipe is so good and so easy. I had to use more water for the batter than what it called for, (to get it the same consistency as pictured), and used avocado oil for the frying part, and still so fluffy and crunchy! YAS girl! Will be coming back for more recipes.
The flavor is delicious! Taking a star off because the instructions do not detail oil temperature. When we tried it much of the breading fell off and made the oil hard to drain.
Will try this again with a few cooking technique tweaks but the seasoning we will keep.
