What I Eat In A Week: 200 Veggie Spring Rolls

This week, I came up with the idea to make 200 Veggie Spring Rolls for my family, friends, and neighbors. My love language is food, so this is my way of sharing some holiday cheer this year. It’s the perfect time to make my low-effort winter recipes, such as an easy cold weather mille feuille hot pot, or a simple girl dinner like Spicy Tuna Rice Bowl.

Matcha Lemon Tonic

Before I get to my 200 spring rolls, I have to get my Matcha Lemon Tonic to get me started. When I have a really intense day of cooking, I love to have a cold matcha drink on the side to sip on to keep me hydrated. This Matcha Lemon Tonic is exactly what I need – refreshing, tart, and just the right amount of matcha umami. It’s a great way to get my caffeine in the morning without coffee!

  • 1.5 tbsp homemade lemon syrup
  • 1.5 tsp matcha powder
  • 3/4 to 1 cup tonic water
  • 1 slice fresh lemon (for garnish)

200 Vegetarian Spring Roll For Loved Ones

Today we’re making 200 vegetarian spring rolls to give our friends, family, and neighbors for the holiday season! It’s going to be a really busy day: prepping, wrapping, deep frying, and delivering spring rolls. It’s also my first time making so many spring rolls, so I’m hoping that everyone will enjoy them. I also had them packaged in to-go containers with Tiffy Cooks stickers!

Just my hot take, but I swear no other quick, deep fried treat tastes better than vegetarian spring rolls. They’re so light, crispy, and refreshing. Plus, they’re incredibly easy to make in bulk and transport – honestly the perfect holiday treat for office parties, potlucks, or just to share some neighborhood holiday love.

I have a super important secret tip to prevent these spring rolls from getting soggy. It makes sure your spring rolls stays super crispy the whole time, so don’t miss out! By the end of the day, we delivered all the spring rolls that we’ve made. We didn’t get home until 11:30 PM, but our hearts were full!

  • ½ Carrot (shredded) 
  • ½ Taiwanese Cabbage (sliced) 
  • 8-10 Shiitake Mushrooms (sliced) 
  • 2 Green Onion (chopped) 
  • 2 tbsp of Cilantro (chopped) 
  • 1 tbsp of Soy Sauce 
  • 2 packs of Vermicelli Noodles
  • 3 tbsp Vegetarian Oyster Sauce 
  • 1.5 tbsp of Mushroom Powder 
  • 2 tsp of White Pepper

Date Night at Chuihong

For date night tonight, Dom and I are heading to Chuihong, a Korean Chinese restaurant recommended to us by so many people – including my Pilates teacher and many of my Korean friends. I’ve been so excited to visit Chuihong, I’m glad we finally made the trip out – because I’m starving!

Of course, we had to order our Korean Chinese go-to items: Tangsuyuk ($32), Jjam Bbong ($17), and Jjyajongmyun ($13). Their Tangsuyuk, or deep fried pork, was served with an amazing sweet and sour sauce on the side with a tartness that cuts through the fatty pork just right. You have to try the soup of their Jjam Bbong – spicy, savory seafood noodle soup. Spicy, savory, and deeply infused with seafood flavor – it’s so good! Don’t forget their Jjyajongmyun, black bean noodles, because it’s one of the best Dom has ever had!

Everything here at Chuihong was so delicious! This place is a 9/10, and I’d definitely recommend checking it out if you’re looking for authentic Korean Chinese food!

Merry & Bright at Martini Town

For date night today, Dom and I came to Merry & Bright at Martini Town for some holiday cheer before the year ends. Martini town is a series of movie sets built to look like the perfect holiday town. It truly felt like a winter wonderland. We stopped to snack on mini donuts and listened to carolers singing classics that warmed our hearts. All the sets and window displays were so cute! Being immersed in the Christmas Spirit brough us so much joy!

Creamy Spicy Tuna Rice Bowl

For a quick lunch before I organize by Christmas gift book haul, I’m making one of my favorite girl meals: the fastest, easiest Creamy Spicy Tuna Rice Bowl. It’s the easiest no-cook meal for anytime you’re in a rush, busy, or just simply lazy. Nothing beats hot rice with spicy tuna, furikake, kimchi, mayo, and seaweed. I love mixing everything together, and wrapping each spicy bite in a sheet of crispy seaweed. It’s the perfect meal to eat while catching up with my mom on FaceTime!

My Christmas Gift and Book Review

2024 has been full of reading for me! For my Christmas gift, Dom gave me 3 minutes to explore the bookstore, and 1 minute to pick up everything I want to buy! It was the BEST Christmas gift ever – and I got so many books to read! I know I just did my 2024 year end book review, but I realized that this would be the perfect time to do a full review of 2024 books, including some that I read at the end of 2023.

In total, we have 40 books to review – from some of the most popular series like ACOTAR to some of my favorite author’s new releases!  I’m going to try to keep it as simple as possible because we have so many books. I’ll give you guys a quick review, a summary, as well as a rating of whether or not I recommend the book at all!

4 Ingredient Mille Feuille Nabe

We’re making Mille Feuille Nabe tonight to save us from the chilly evening! I’m starving after my book review, and what I really need is something warm but super simple. Today, we’re making a simplified version of this pork hot pot with only 4 simple ingredients: sliced pork belly, napa cabbage, mushrooms, and dashi broth. It’s not only incredibly light, it’s healthy too!
