I’m using a rack of pork spare ribs today for braising. You usually see spare ribs cut into chunks, but I’m cutting them into individual ribs for a big satisfying bite of meat. You can also use baby back ribs for this recipe as well!

Before cooking, blanch the ribs in cold water to draw out impurities. Make sure to rinse with cold water after to wash off all the gunk. This extra steps makes sure that your ribs tastes cleaner, without the gaminess that pork can sometimes have.

What Is In Chinese Red Braising Sauce?

The Chinese red braising liquid, made from soy saucedark soy sauce, oyster sauce, and honey, adds most of the flavor in this braise. These condiments are all Asian pantry ingredients I love using in my recipes! As the ribs simmer, it soaks that sweet and savory flavor right into the meat while keeping everything moist and tender. The dark soy sauce and honey reduces down, giving the ribs a glossy, caramelized color.

Once you finish cooking, drizzle the extra liquids over the ribs, or add them on top of your sides for a super flavorful meal.

Spices Used For Chinese Red Braising

Adding whole garlic cloves, green onion stalks, and Sichuan peppercorns to the braising liquid gives the dish a deeper, layered flavor. The mix brings a subtle warmth, a light numbing tingle, and just enough brightness to balance out the sweet, sticky sauce.

How To Make Fall Off The Bone Red Braised Pork Ribs

  1. Place the sliced ribs into a pot of cold water.
  2. Bring to a boil over medium-high heat. Boil for 3–5 minutes, until impurities rise to the top.
  3. Drain and rinse ribs under cold running water.
  4. In a clean pot, add the blanched ribs. Pour in soy sauce, dark soy sauce, oyster sauce, and honey. Add whole garlic cloves, green onion, Sichuan peppercorns, and enough water to mostly cover the ribs. Bring to a simmer over medium heat.
  5. Once simmering, reduce to medium-low heat, cover, and cook gently for about 1 hour. Stir once or twice during cooking to prevent sticking.
  6. Plate and spoon some of the rich braising sauce over the top.

    Insanely good! Your recipes are some of my top go-to, and now I have another one to add to the rotation.

    I ended up using about 3.3 lb of ribs, so I doubled the rest of the recipe, and had to braise the ribs for an extra 30 minutes. I had a lot of thin sauce (due to the pot used), so I thickened slightly it with a cornstarch slurry.l at the end of cooking.

    I followed the recipe but, I added a little Sesame oil, brown sugar and, shaoxing wine because, I love those other ingredients when I am making Chinese style ribs. Loved making your ribs. Ty so much for sharing your recipe

    1. Hi Yanixa, you can do 3-4 hours on high (or 6-7 on low). Make sure to still blanche the pork ribs before putting them into the slow cooker!

    1. Hi Cathy! Yes you can. Put the blanched clean ribs and seasonings on high for 25 minutes, then natural release for 15 minutes. If you want a reduced sauce, you can put it on saute uncovered for about 10-15 minutes to reduce the rest of the liquid!
