Yakisoba is easy, healthy, delicious, and ready in less than 20 minutes! It is a Japanese stir-fried noodles that’s just the perfect balance of sweet, tart, and savory. Plus, it is packed with a ton of veggies!
This is a popular summer festival street food as well as classic izakaya dish in Japan. But, Yakisoba is actually incredibly easy to make at home! I’m sharing this noodle recipe as an easy, vegetarian base recipe. But, you can get creative and add your favorite proteins as well, like tofu, chicken, pork, shrimp, or more.

- 8 Shiitake Mushrooms sliced
- ½ Onion sliced
- Pickled red ginger Garnish, optional
Yakisoba Sauce

- 2 tbsp Vegetarian Oyster Sauce
- 4 tbsp Worcestershire Sauce
- 1.5 tbsp Sugar
- 1.5 tbsp Ketchup

Noodles for Yakisoba
Yakisoba has “soba” in the name, but the word here actually refers to “noodles” in Japanese. The noodles used for yakisoba isn’t the commonly known buckwheat “soba noodles” for dipping, but instead are wheat-based noodles that are often pre-steamed and packaged.
If you can’t find yakisoba noodles, you can also use fresh egg noodles, lo mein noodles, or ramen noodles. Depending on what brand of noodles you use, you may need to blanch the noodles with hot water for 2-3 minutes or until noodles are separated. Drain and rinse with cold water before adding it to the pan to saute. This step will prevent the noodles from getting soggy!

Yakisoba Sauce
My secret to my addicting Japanese Fried Noodle is my secret homemade Yakisoba Sauce (焼きそばソース). The sauce is the perfect balance between savory, sweet, and tangy. I promise, it is so much better than storebought ones! It is a savory brown sauce made with a mix of black pepper, soy sauce, vegetarian oyster sauce. But, it’s particularly sweet and tangy thanks to Worcestershire Sauce, sugar, and ketchup. The tanginess is what makes these particular noodles so appetizing. It was actually added to balance out the fatty pork that’s typically added to yakisoba. But, now it’s a signature flavor that makes the whole dish super delicious.

How To Make Easy Yakisoba
- In a bowl, mix soy sauce, vegetarian oyster sauce, Worcestershire sauce, sugar, and ketchup. Mix until sugar has melted
- In a pan, add drizzle in oil and turn the heat up to medium-high. Once the pan is hot, add in sliced onion, carrots, and shiitake mushrooms. Saute for 2-3mintues
- Next, add in sliced cabbage and green onion and saute for another 1-2 minutes.
- Make a hole in the middle of the pan and add in soba noodles (refer to notes), pour in ½ of the mixed sauce and black pepper, and saute together for 1-2 minutes.
- Once mixed well, pour in the rest of the sauce and saute together for another 2 minutes on high heat. Garnish with pickled ginger, and enjoy!
