This is the easiest stir-fry dish to make for any occasion – from a Wednesday night dinner to group get together. What Beef Cut To Use For Steak Stir Fry
I like using Angus Beef Chuck Flat steak for my beef stir fry, but I also recommend sirloin, New York, tenderloin, or rib-eye. These cuts have more marbling and fat, so the beef will be more tender. But, the true pro-tip for tender beef is actually how you cut it! If you follow these steps, the slices of beef will turn out perfect every time – no matter what cut you get:
- Freeze the beef for 30 minutes before slicing. It’ll be easier to cut – and come out much more beautifully.
- Always cut the beef against the grain and diagonally.

Velveting Your Beef For Super Tender Steak Stir Fry
My best tip for tasty beef when stir frying is marinating meat before cooking. It’s the easiest way to achieve flavorful, juicy meat in your dishes. My friend who worked at a Chinese restaurant actually has a great tip: adding some baking soda into your marinade.
Today, we’re using a Chinese cooking technique called velveting, where we add egg white, corn starch, and baking soda to make the meat come out tender and velvety. The baking soda tenderizes, while the corn starch and egg white gives it a layer of protection from overcooking. It’s honestly a game-changer!

Stir Fried Sizzling Black Pepper Steak Ingredients
- 2 pieces Steak
- 1 Egg White
- Salt and Pepper to taste
- 1 tbsp Corn Starch
- 1 tbsp Baking Soda
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 1.5 tablespoon Oyster Sauce
- 1 tablespoon Soy Sauce
- 2 tablespoon Sizzling Black Pepper Sauce

How To Make Sizzling Pepper Beef Stir Fry
- Slice the steak, and put them into a mixing bowl. Add in egg white, salt, pepper, corn starch, and baking soda.
- Mix well and marinade for at least 30 minutes.
- Add oil to a pan on medium-high, and add the beef into the pan when the oil is hot.
- Brown the meat for 3-4 minutes, then remove and set aside.
- In the same pan, add onions and sauté for 5 minutes or until translucent. Then, add in bell peppers.
- Drizzle in oyster sauce, soy sauce, and Sizzling Black Pepper Sauce.
- Add the beef back into the pan and sauté for 2-3 minutes.
