The Spicy Noodle Stir Fry Secret Is In The Sauce

The key to this flavorful noodle stir-fry recipe is its soy-based sauce with both dark and normal soy sauce. With umami from oyster sauce and fish sauce, and sweetened with sugar, it’s a yummy salty-sweet sauce that really coats the noodles well.

To make our spicy noodles both spicy and extra fragrant, I like to take an extra step by sauteing the red onion and garlic in chili oil. My favorite chili oil to use here is kai dong’s Mama’s Chili Oil, or my homemade chili oil recipe. If you don’t like spicy food, you can skip the chili oil, and these stir-fried noodles will be just as delicious!

Prepping Shrimp For Shrimp Noodle Stir Fry

With this Spicy Chow Mein recipe, you can use fresh or frozen shrimp/prawns, but remember to defrost, peel, and clean the shrimp first! Shrimp is such a convenient protein to keep in the freezer. It cooks fast – perfect when I need to add protein in a rush. While making shrimp recipes, I always start with marinating. It gives me some time to let the seasonings sink in while I prep the other ingredients.

If you’ve run out of shrimp, or prefer something else, chicken and tofu are great protein replacements for the shrimp in this recipe. If you’re using chicken, make sure to increase your cooking time and cook them fully.

Best Types of Noodles For Spicy Noodle Stir Fry

You can use any noodles of your choice when making Spicy Stir-fry Noodles, but I tend to prefer noodles that withstand stir-frying after cooking. For my Spicy Shrimp Noodles today, I used kai dong’s QQ Noodles which i find to be the perfect thickness and bounce for chow mein dishes like this one. I sometimes also use udon or other Asian wheat noodles. If you are on a keto diet, I highly recommend shirataki noodles.

Spicy Shrimp Noodle Stir Fry Ingredients

  • 3 servings QQ Noodles or preferred noodles
  • 300 g shrimp peeled and deveined (you can also use chicken or tofu)
  • Salt and pepper to taste
  • 1 small red onion thinly sliced
  • 6 cloves garlic minced
  • 1-2 tbsp chili oil adjust for spice level
  • 1 cup bok choy chopped
  • 1 cup bean sprouts
  • 1 cup thai basil

How To Make Stir Fried Spicy Shrimp Noodles

  1. Prepare Noodles: Cook noodles according to package instructions, then drain and set aside. For QQ noodles from kai dong, cook for 6 minutes and set aside. 
  2. Season Shrimp: Toss shrimp with a pinch of salt and pepper.
  3. Make Sauce: In a small bowl, mix soy sauce, oyster sauce, fish sauce, and sugar.
  4. Heat 1-2 tbsp chili oil in a large pan or wok over medium heat. Add red onion and garlic. Stir-fry for 1-2 minutes or until fragrant.
  5. Next, add in the shrimp, and sauté until the shrimp are pink and cooked through about 2-3 minutes. 
  6. Next, add in the noodles, bok choy, and bean sprouts, and drizzle on the sauce. Saute on high heat for 2-3 minutes or until noodles are coated in the sauce and bok choy is softened. 
  7. Finally, add in the Thai basil and saute on high heat for 1-2 minutes.

  2. I would like to try the recipe but I don’t like red onions. Can I substitute with something else?

    1. Hi Mary, you don’t have to use red onions. You can use a white one, or replace with shallots or green onion. If you prefer not to have any oniony flavors you can skip it altogether or replace it with a different veggie you like!
