EXTRA CRISPY Sichuan Style Spicy Garlic Potato is addicting, savory, and an easy recipe that you need to try.
The potatoes are perfectly crispy on the outside while fluffy and soft on the inside.
The potatoes are then tossed in a savory and spicy seasoning that is super addicting!
My inspiration for my Spicy Garlic Potato came from these Sichuan-style fries I had in portland.
I have always been such a fan of Sichuan-style spicy and numbing seasoning, and when coated in fries, the fries were super addicting and the perfect dish paired with an ice-cold beer.
I wanted to try the recipe, but instead with potatoes for a more accessible and healthier alternative.
It took me a few months to get the correct seasoning and consistency, but I am excited to share this recipe after SEVERAL attempts!
Let’s start with the basics and my secret tips for crispy and fluffy Spicy Garlic Potatoes.
- STEAMING: Steaming the potato prevents them from getting soggy and watery.
- If you don’t have a steamer, you can also microwave the potato. The goal is to cook the potato while still holding its shape.
- TOSSED WITH FAT: Toss the steamed potato with duck fat, butter, or olive oil.
- Make sure that every piece of potato is coated before pan-frying; this step will help crisp up the edges and ensure every part of the potato becomes crispy.
- BE PATIENT: Be patient and let every single side of the potato pan-fry till crispy and golden brown.
- I like to use chopsticks to ensure every side is pan-fried evenly. Since the potatoes are already 90% cooked from steaming, the focus will be to crisp up the edges.
I am not lying that the seasoning mix for my Spicy Garlic Potato is SUPER addicting and will be your go-to seasoning mix for fries and potatoes.
The seasoning mix consists of white pepper, salt, ground Sichuan pepper, cayenne pepper, garlic powder, ground chili, ground cumin, and mushroom powder.
If you never tried white pepper before, it is a staple ingredient in Asian cuisine. White pepper is more spicy compare to black pepper, so a little goes a long way!
Another essential ingredient is a mushroom powder; I am using LKK Mushroom Powder which contains MSG, to give you the restaurant-style quality. But you can also grind up dehydrated shiitake mushroom for natural MSG flavors.

Ingredients
- 1.5 lb of Little Potato (cut in half)
- 3-4 tbsp of Fat (butter, duck fat, or olive oil)
Seasoning Mix:
- ¾ tsp of salt
- ½ tsp of garlic powder
- ½ tsp of Cayenne Powder
- 1 tsp of white pepper
- ½ tsp of ground Sichuan peppercorn
- ½ tsp of Ground Cumin
- 1.5 tsp of mushroom powder
- ¼ tsp of ground chili
- 2 tbsp of Minced Garlic
- Steam the potatoes for 20 minutes
- Mix all the ingredients from the seasoning mix; if you like it spicer, you can increase the amount of ground chili and ground Sichuan peppercorn.
- Add 3-4 tbsp of fat into the steamed potato and mix well. Ensure that every piece of potato is coated in the fat.
- In a pan, add in oil and turn the heat to medium-high. Once the pan is hot, add in the potato.
- Let the potato set for 2-3 minutes on each side. Ensure that every side of the potato is fried till crispy and golden brown.
- Add in minced garlic, seasoning powder, and statue on high heat for 1 minute.
- Options: Finish off with cilantro and sesame seeds

Materials

I got my mushroom powder from t&t but most Asian grocery store should carry, I used the LKK brand, same one I linked in Amazon.
For duck fat I got it at buy low foods near high gate and also whole foods should sell it 🙂
