XO Sauce Beef Fried Rice (30 Minutes ONLY!)

Whenever I miss Taiwan, I make my favorite XO Sauce Beef Fried Rice.

There are many fantastic beef fried rice recipes, but I promise combining XO sauce and beef will blow your mind.

If you have never tried XO sauce before, it is a spicy Hong Kong seafood sauce made mostly from scallops that provide the ultimate umami flavor.

Using high-quality XO sauce makes a world of difference as a little goes a long way.

Tender Beef

Here are a few secrets to SUPER TENDER Beef for your XO Sauce Beef Fried Rice every single time!

  • The first one is baking soda. I got this secret from a good friend who works at a Chinese restaurant; it is honestly a game-changer. No more eating tough beef at home, and hello to juicy, tender, silky beef!
  • The second tip is cutting against the grain and diagonally. Always cut against the grain and sideways to get thin slices. With this tip, it doesn’t matter what type of steak you get; it will turn out perfect every time!
  • The final tip is to freeze the beef for 10 minutes before you slice it, and this step will make it 100x easier to cut the meat.
how to make fried rice

The key to perfect fried rice is using COLD, DAY OLD Rice.

Please don’t use fresh rice as it will turn mushy. Before frying, I like to break the rice apart with my hands; it cuts down the cooking time, and each grain will get coated in the sauce. For those that are lazy, order take-out rice for $1 and fry up XO Sauce Beef Fried Rice the next day!
