Plus, the best part is that this butter mushroom rice recipe is also a ONE-POT DINNER recipe, so quick, delicious, and doesn’t require alot of dishes.

This Butter Mushroom Rice will be your go-to recipe if you love mushrooms like me.
You can customize the mushroom-based on what is in season and what you have at home.
My go-to choices are oyster mushrooms, shiitake mushrooms, and shemiji mushrooms.
Shiitake mushroom is the most flavorful mushroom and provides a “meaty” texture. If you are not vegetarian, you can also add some crispy bacon.

The secret ingredient that makes this butter mushroom rice extra special is dashi powder.
Dashi powder provides alot of umami flavor and instantly transforms the dish.
A little goes a long way, and it is utilized in many recipes on my blog.
I like to use instant Dashi Powder, which you can purchase on Amazon or any Asian grocery store.
For vegetarians, vegetarian dashi powder is available made from Kombu, or you can also swap it for mushroom powder.

Ingredients
- 3 tbsp of Butter
- 2.5 cups of Rice (Cooked & Cooled)
- 3 cups of Mushrooms – shiitake, shemiji, and oyster mushrooms
- 0.5 tsp of Black Pepper
- 1.5 tbsp of Soy Sauce
- Seaweed Powder
Sauce:
- 2 tbsp of Soy Sauce
- 1 tsp of Sugar
- 1 tsp of Dashi Powder
SHOP THE INGREDIENTS
- Add 2 tbsp of butter to a pan and turn the heat to medium-high. Once the pan is hot, add the mushroom and 1.5 tbsp of soy sauce, and 0.5 tsp of Black Pepper.
- Saute the mushroom for 3-4 minutes or until fragrant.
- Mix 2 tbsp of soy sauce, 1 tsp of sugar, and 1 tsp of Dashi Powder.
- Add the rice, pour on the sauce, and saute on high heat for another 2-3 minutes. Make sure all the rice is coated in the sauce and butter.
- Optional, but highly recommended, finish off with another 1 tbsp of butter, and saute on high heat for another 1 minute.
- Garnish with seaweed powder and green onion, and enjoy! lo
