In my dad’s honor this Christmas, I planned out this delectable 6 course prime rib family feast as my way of sharing his love for food with my family. It’s our first Christmas Eve dinner without my dad, and even though he wasn’t physically here, I could still feel his presence every time we’re sharing his love of food. My dad believed that every shared bite was a little moment of connection, love, and gratitude. So, instead of ordering takeout and letting the day pass quietly, we are cooking 6 delicious recipes for our full-course meal.

Pomegranate Apple Waldorf Salad for Any Occasion

This Apple Walnut Waldorf Salad was the best salad to start this meal. It’s sour, sweet, and crunchy, and so easy to make! With all the meaty, creamy dishes we have in this menu, I needed something colorful and fresh to balance out all these rich, creamy flavors. Topping this salad with fresh burrata, honey, and balsamic vinegar makes this fruit-based salad seem extra fancy – exactly what we needed for the occasion!

  • 3-4 Cups Spring Mix
  • 1 Red Apple cored and diced
  • ½ Cup Pomegranate Seeds

Herb-Crusted Prime Rib with Au Jus and Horseradish

I found this beautifully marbled 5 pound prime rib from Costco, and decided this will be the centerpiece of our 6-course meal. This tender slab of beef was so easy and quick to prepare the night before. All I had to do was trim off some of the excess fat and seasoning generously on all sides with salt, pepper, and steak seasoning. Then, rest it uncovered in the fridge overnight. That’s it!  It’s a labor of love, but don’t let its size intimidate you. This Prime Rib recipe is actually super easy to make!

  • 5 Pound Prime Rib
  • Salt
  • Pepper
  • Steak Seasoning
  • 2-3 Stalks Celery
  • 2-3 Carrots Carrots
  • 1 Medium Onion
  • Butcher’s Twine

Herbed Garlic Butter

  • 3 Sticks of Butter, Room Temperature
  • ¼ Cup Thyme
  • ¼ Cup Rosemary
  • ¼ Cup Oregano
  • 1 Teaspoon Salt
  • 1 Tablespoon Pepper
  • 2 Tablespoons Minced Garlic
  • 1 Teaspoon Stone Ground Mustard

Horseradish Sauce

  • 1 Cup Sour Cream
  • 3 Tablespoons Horseradish

  • 3 Tablespoons Flour

Extra Fluffy Cheesy Garlic Dinner Roll

This easy, delicious Cheesy Garlic Bread recipe was actually inspired from my home cafe experience last month for 22 guests. I loved the texture of my cinnamon bun’s dough, but I wanted something savory for my Christmas Eve feast.

I just couldn’t stop thinking about turning my fluffy cinnamon bun recipe into something savory, cheesy, and packed with garlic. So, for Christmas, we tried a garlic bread stuffed with chunks of cheese using a similar overnight dough. The super fluffy overnight dough turned out to be a perfect base for both recipes!

Inspired by the base dough of my cinnamon roll, the texture of this garlic bread comes out so fluffy. It's perfect way to wipe up all the tasty morsels of prime rib on our holiday feast plate.

Spicy Gochujang Creamy Shrimp Pasta

Our last dish of the meal is a deliciously creamy Spicy Gochujang Shrimp Pasta. I really wanted to add a pasta to my menu that’s savory, umami-packed, but also a little spicy. This shrimp recipe has a deep spicy flavor in a creamy gochujang sauce that is not just satisfying with a bite of pasta. The sauce was so good, I wiped it clean with my cheesy garlic roll! If you prefer a less spicy sauce, you can also swap with tomato paste instead.

  • 400 g pasta (rigatoni) 
  • 1 lb prawns, deveined & deshelled
  • 1.5 tbsp Korean red chili paste
  • 2 shallots, chopped
  • 1.5 tbsp garlic, minced
  • 1 cup heavy cream
  • Handful of parsley, chopped & separated by stem
  • ½ tbsp dried red chili flakes
  • 1 cup parmesan cheese
  • ½ cup hot pasta water (reserved)
