Super Refreshing Chunky Pineapple Salsa
This chunky Pineapple Salsa might be my new favorite summer condiment! Juicy sweet chunks of pineapple are mixed with onion, lime, and tomatoes and seasoned for the most refreshingly tart-savory bite. It’s the perfect topping for grilled meats, tacos, seafood, and on top of rice bowls. Or, enjoy them with tortilla chips! If you’re looking to jazz up your summer backyard barbecue, you need to make this pineapple salsa!

Chunky Pineapple Pico de Gallo
I’ve been really experimenting with fruit condiments in my meals recently, and this Pineapple Salsa is no exception. This Pineapple Salsa is a fresh, tropical twist on classic pico de gallo, a fresh, chunky type of salsa. It’s particularly popular in the more tropical areas of Mexico like the Yucatán Peninsula where they produce more pineapples. This summer condiment is fresh, juicy, sweet, and tangy. While most salsas have a saucier consistency, the chunkiness of this pineapple pico de gallo makes it extra fresh and so fun to eat.

Pineapple Salsa Ingredients
- 2 cups chopped pineapple fresh or canned
- 2 tbsp pineapple juice reserved from can
- 1/4 cup finely chopped white onion
- 1 jalapeño finely chopped, seeds removed, optional
- 1 tomato seeds removed and diced
- 1/4 cup chopped cilantro
- 2-3 tbsp Lime juice About 1 lime
- Salt and black pepper to taste

Pineapples
Pineapples are a particularly good choice for a fruit salsa during a summer barbecue. They’re sweet and super tangy compared to mangoes. But, they’re healthy, too, because they are also super high in Vitamin C, antioxidants, and Manganese, which supports immune and bone health. I’m using Dole’s canned pineapple chunks, which will sometimes have a sweeter, more concentrated pineapple flavor. If you’re using canned pineapples, definitely save some for that juice to use for later!
But, you can use fresh pineapple as well. Fresh pineapples are high in Bromelain, an enzyme that reduces inflammation and supports digestion by breaking down the meat proteins. So, they’re perfect for meat-heavy barbecues.


How To Make Pineapple Salsa
- Add the chopped pineapple, pineapple juice, white onion, jalapeño, tomato, cilantro, and lime juice to a bowl.
- Season with salt and black pepper, then mix well.
- Let the salsa sit for 10-15 minutes before serving to allow all the flavors to come together.
- Serve with tacos, grilled chicken, fish, shrimp, rice bowls, or tortilla chips.
