Savoury, Spicy, and Addicting Dandan Noodle is super easy to make at home!
Dandan Noodle is one of Asia’s most famous street food, and you can make it in under 20 minutes!
This spicy, numbing sesame sauce is served with fresh noodles and topped with pickled ground pork.
Dandan Noodle is one of my must-order dishes wherever I go to a Sichuan restaurant, and once you try it, I promise it will be yours as well!

Dandan Noodle is easy to make, but one of the essential ingredients is Sui Mi Ya Cai, Sichuan dried and preserved vegetables.
Sui Mi Ya Cai is a crucial ingredient in many famous Sichuan Cuisine. Sui Mi Ya Cai makes up a crucial sour and savory flavor in Authentic Dandan Noodle.
You can find Ya Cai at most Asian grocery stores, or you can order them off Amazon.

To make the famous Dandan Noodle sauce you will need Creamy Sesame Paste (or Tahini), Homemade Chili Oil, Soy Sauce, Black Vinegar, and a pinch of sugar.
You can use Tahini to replace the Sesame paste, or I also have a very simple Sesame Paste recipe that takes less than 5 minutes to make.

I am using my Homemade Chilli Oil today; it is my favorite chili oil and super easy to make at home.
Unlike many other recipes, there will be no waste with this homemade chili oil recipe. I highly recommend making the chili oil in bulk because it tastes amazing with EVERYTHING.

The topping consists of ground pork or chicken and Sui Mi Ya Cai.
However, if you are a vegetarian, you can also use beyond meat or chopped shiitake mushrooms.
Shiitake mushroom has a meat-like texture and is also great at absorbing flavor.
For the noodles, you can use any white noodle of your choice.
I like to use either my homemade hand-cut noodles, sliced noodles, or fresh white noodles. If you don’t like it near a local grocery store, I like DragonMal Wu-Mu’s Dry Noodle, Tseng Noodles, KIKI FINE GOODS, and Hsin Tung Yang Sliced Noodle.

Ingredients
- 500g of Ground Pork
- 1 Tbsp of Soy Sauce
- 1 Tbsp of Chinese Cooking Wine (optional)
- 4 cloves of Garlic (minced)
- 1 tsp of Sugar
- 1.5 tsp of Ground Sichuan Pepper
- 1 pack of Sui Mi Ya Cai (US LINK) Sui Mi Ya Cai (Canadian Link)
- 2 packs of Noodle
- 2 Buk Choy or vegetable of your choice
Dandan Noodle Sauce:
- 1 tbsp of Soy Sauce
- 2 tbsp of Black Vinegar
- 2 tsp of Sugar
- 1.5 tbsp of Cooked Sesame Paste
- 2 tbsp of Homemade Chili Oil
- 1-2 tbsp of Hot Water
SHOP THE INGREDIENTS
- Prepare your favorite noodle and set it aside.
- Mix 1 tbsp of Soy Sauce, 2 tbsp of Black Vinegar, 2 tsp of Sugar, 1.5 tbsp of Cooked Sesame Paste, 2 tbsp of Homemade Chilli Oil, and 1.5 tbsp of Hot Water/Cooked Pasta Water. Mix until the sauce is smooth; add more hot water/pasta water if needed
- In a pan, drizzle in oil and turn the heat up to medium-high. Add in ground pork and saute for 2-3 minutes while breaking the pork apart.
- Next, add in minced garlic and Sui Mi Ya Cai and saute for another 1-2 minutes.
- Add in 1 tbsp of Soy Sauce, 1 tbsp of Chinese cooking wine, ground Sichuan pepper, and 1 tsp of sugar, and saute for another 1-2 minutes.
- To put everything together, start with 5 tbsp of the sauce, add in noodles and vegetables, topped with ground pork, and drizzle on more homemade chili oil.
