
Have you ever tried Spicy Garlic Pig Ears?
A popular Taiwanese side dish and one of my personal favorite late-night snacks, Spicy Garlic Pig Ears.
The outer texture is soft, while the inside is slightly crunchy from the cartilage.
Spicy Garlic Pig Ears is the perfect snack because when tossed with the spicy garlic sauce, the pig ear soaks up all the garlicky flavor but still tastes refreshing and not greasy.

Did you know that pig ears are highly nutritious since most of the ear is made of collagen?
Pig ears are great for your skin and bones, and it also has high levels of iron and omega-3.
When eating spicy garlic pig ears, you will notice that your lips get stuck together because of all the collagen from the pig ears.
If you are looking for a healthier alternative, you can skip the spicy chili oil, and instead, just eating braised pig ears alone is a low-calorie and healthy snack!

I always have homemade chili oil in the fridge, ready to go. Homemade chili oil is super easy to make, and unlike other recipes, there will be no waste.
I blend up all the garlic, spices, and herbs to take this chili oil to another level.

You can prepare Spicy Garlic Pig Ears in bulk and enjoy it as a late-night snack for a week.
The longer you store the pig ears with the sauce, the more flavourful the dish becomes. Store the pig ears in an air-tight container in the fridge for up to 5 days.
You can also freeze the pig ears and defrost it overnight to enjoy. You don’t need to heat the Spicy Garlic Pig Ears as you can enjoy it cold, but if you prefer it hot, you can also do so.

Ingredients
- 5 Pig Ears
- 1 tablespoon Sichuan peppercorn
- 10 cloves garlic
- 4 thin slices ginger
- 2 stalks green onion
- ⅛ cup vegetarian oyster sauce
- ¼ cup soy sauce
- 2 tablespoon sugar
- 2-3 bay leaf
- 3 star anise
Spicy Garlic Sauce
- 1 tablespoon vegetarian oyster sauce
- 1.5 tablespoon soy sauce
- 2 stalks green onion, chopped
- 10 cloves garlic, chopped
- 0.5 tablespoon Korean red chili flakes (optional)
- ½ tablespoon sesame seeds
- 2.5 tablespoons homemade chili oil
- 4 tablespoon vegetable oil
- In a pot, add pig ears, Sichuan peppercorn, garlic, ginger, green onion, vegetarian oyster sauce, soy sauce, sugar, bay leaf, and star anise.
- Fill the pot with 4-5 cups of water, or enough to cover all the pig ears.
- Bring it to a simmer, put the lid on, and cook on medium heat for 30 minutes.
- Remove the pig ears, and let them cool down while you prepare the sauce.
- For the sauce, in a large bowl, add vegetarian oyster sauce, soy sauce, chopped green onion, chopped garlic, Korean red chili flakes, sesame seeds, and homemade chili oil.
- Heat 4 tablespoons of oil, and once the oil is hot, drizzle the oil over the sauce mixture, let it sizzle, and mix well.
- Once the pig ears are safe to touch, cut them in half and into strips. Drizzle the garlic sauce all over the pig ears, toss everything together and garnish with cilantro.
