When I’m craving something simple and convenient, these Spicy Stir-Fry Noodles are my go-to lazy meal. Take whatever’s in the fridge, like leftover veggies, a can of spam, and eggs, and toss them with springy noodles in a quick stir-fry sauce made from soy sauce, garlic, black vinegar, and a bit of homemade chili oil for gentle heat. In just 20 minutes, I’ve got a bold, flavorful dish that makes even leftovers taste seriously good.

Realistic Dinner Episode 5: Spicy Stir Fried Noodles

Today we are making Spicy Stir-fry Noodles in 20 minutes! Welcome back to episode 5 of realistic dinner, featuring ingredients I already have in the fridge. I am always looking for EASY dinner recipes that cleans out my fridge, which is why these Spicy Stir-Fry noodles have been one of my go-to weeknight dinners.

This noodle recipe is seriously so delicious, and is perfect for those days where I just don’t want to take so much time to make a meal. You’ve got to give this easy 20-minute recipe a try, I promise you won’t regret it!

Spicy Stir Fry Noodle Ingredients 

  • 2 serving Noodles
  • 1 cup cabbage sliced
  • ¼ carrot sliced
  • 2 stalks green onions cut into 2-inch pieces
  • 3 stalks celery sliced
  • 1 can Spam sliced
  • 3 eggs beaten
  • Salt and pepper to taste

The easiest part about these delicious Spicy Stir-Fry noodles is choosing what to add in it. You can customize it with any ingredient in the fridge.

I am adding in spam, eggs, cabbage, carrots, and celery, but you can also substitute with anything you like. This dish goes particularly well with bok choy, mushrooms, tofu, Chinese broccoli, and more. You can also make it completely vegetarian by skipping the spam.

Easy Spicy Stir Fry Noodle Sauce

The sauce for spicy stir-fry noodles is SUPER easy to make at home. All you need is soy sauce, oyster sauce, black vinegar, black pepper, and homemade chili oil.

You can use any chili oil of your choice, but the star of the spicy stir-fry noodles sauce is my Homemade Chili Oil that’s always in my fridge. I drizzle my Homemade Chili Oil on EVERYTHING! If you don’t like spicy food, you can skip the chili oil, and these stir-fried noodles will be just as delicious!

What Noodles To Use For Stir Frying

You can use any noodles of your choice when making Spicy Stir-fry Noodles. I am using instant noodles, but you can also use udon, white noodles, ramen noodles, or any noodle of your choice. Or, I use my 3-ingredient hand-cut noodles that I keep in the freezer. If you are on a keto diet, I highly recommend shirataki noodles.

How To Make Spicy Stir Fried Noodles

  1. Blanch the noodles for 3 minutes or until al dente and let them rest in ice-cold water. Drain and set aside. 
  2. In a bowl, mix soy sauce, oyster sauce, black pepper, black vinegar, and homemade chili oil. Adjust the chili oil based on your spice tolerance. 
  3. In a pan, add in SPAM, and pan-fry for 2-3 minutes on medium-high heat or until crispy. You don’t need to add any oil, and the spam should render out some oil. 
  4. Next, drizzle in beaten eggs, set it for around 30 seconds, and scramble everything together. 
  5. Next, add in all the vegetables, and saute for another 2-3 minutes or until soft. 
  6. Finally, add in all the noodles, and drizzle in the sauce. Saute on high heat for another 2-3 minutes and you are ready to serve!
