Today we are making Spicy Stir-fry Noodles in 20 minutes! Seriously so delicious, and you can make these easy Spicy Stir-fry Noodles with any ingredient you have in the fridge.
If you dont like spicy food, you can skip the chili oil, and these stir-fried noodles will be just as delicious! You got to give this easy 20-minute recipe a try, and I promise you won’t regret it!

I am always looking for EASY dinner recipes, which is why these Spicy Stir-Fry noodles have been one of my go-to weeknight dinners.
Super easy and delicious Spicy Stir-Fry noodles, and you can customize it with any ingredient in the fridge.
I am adding in spam, eggs, cabbage, carrots, and celery, but you can also substitute with anything you like. For example, you can add bok choy, baby corn, ham, pork belly, or anything you like.

The sauce for spicy stir-fry noodles is SUPER easy to make at home.
All you need is soy sauce, oyster sauce, black vinegar, black pepper, and homemade chili oil. The black vinegar provides a great acidity to the sauce, which will get you craving more.
Use any chili oil of your choice, but the Star of the sauce for my spicy stir-fry noodles is my Homemade Chili Oil. I drizzle my Homemade Chili Oil on EVERYTHING because I promise it is the best chili oil you will ever try!
I always have homemade chili oil in the fridge, ready to go. Homemade chili oil is super easy to make, and unlike other recipes, there will be no waste. I blend up all the garlic, spices, and herbs to take this chili oil to another level.

You can use any noodles of your choice when making Spicy Stir-fry Noodles.
I am using instant noodles, but you can also use udon, white noodles, ramen noodles, or any noodle of your choice.
If you are on a keto diet, I highly recommend shirataki noodles. I also have a hand-cut noodle recipe that is super easy. You can prepare the noodles in bulk and freeze them for up to 2 months.

Ingredients
- 2 serving Noodles
- 1 cup cabbage, sliced
- ¼ carrot, sliced
- 2 green onions, cut into 2-inch pieces
- 3 stalks of celery, sliced
- 1 can SPAM, sliced
- 3 eggs, beaten
- Salt and pepper to season
Spicy Sauce
- 2 tablespoon soy sauce
- 1.5 tablespoon oyster sauce
- 0.5 teaspoon black pepper
- 2 tablespoons black vinegar
- 1-3 tablespoons homemade chili oil, adjust to your spice level
- Blanch the noodles for 3 minutes or until al dente and let them rest in ice-cold water. Drain and set aside.
- In a bowl, mix soy sauce, oyster sauce, black pepper, black vinegar, and homemade chili oil. Adjust the chili oil based on your spice tolerance.
- In a pan, add in SPAM, and pan-fry for 2-3 minutes on medium-high heat or until crispy. You don’t need to add any oil, and the spam should render out some oil.
- Next, drizzle in beaten eggs, set it for around 30 seconds, and scramble everything together.
- Next, add in all the vegetables, and saute for another 2-3 minutes or until soft.
- Finally, add in all the noodles, and drizzle in the sauce. Saute on high heat for another 2-3 minutes and you are ready to serve!
