As we all know, each month brings its own set of cravings and culinary needs. Whether you’re looking for period comfort food or just some delicious inspiration, these dishes are perfect for any day of the month. My breakfast and lunch recipes normally take less than 20 minutes to make, while I will take my time to cook up something that I am craving for dinner.
Today, I will be sharing WHAT I EAT IN A DAY when I’m craving a little bit of spice.
BREAKFAST: FRIED CHILI OIL EGG WITH RICE
Woke up with a serious craving for something spicy this morning – you know how it is during that time of the month, right? So, I decided to whip up my super quick Chili Oil Egg Breakfast. It’s my absolute go-to when I need a little zing to start my day. Plus, it’s pretty versatile – throw in any veggies you’ve got, and you’re all set. Today, I used lettuce, sprouts, and cucumber. It’s one of those perfect quick meals for low energy days, especially when you’re dealing with period cravings!
The real star of this dish? Chili oil. My favorite is Kai Dong Mama’s Chili Oil, but you can also make your own chili oil. It’s the magic ingredient that takes the humble eggs to a whole new level of yum, perfect for spicy cravings. Just a tablespoon, and you transform your breakfast into a fiesta of flavors. It’s all about that perfect balance of heat and comfort, which is why I love adding it to my morning routine.
Chili Oil Egg Ingredients
- In a pan, add in butter and chili oil, bring it to a sizzle for around 1 minute.
- Season with soy sauce, mix well, then add in eggs.
- Cook egg to your desired doneness.
- Serve on top of rice and vegetables.
LUNCH: 10 MINUTE NOODLE SOUP & VEGGIE PANCAKE
For lunch, I chose a recipe that just warms you right up: my Easy 10-Minute Noodle Soup. It’s the kind of meal that’s perfect for those days when you need a little extra comfort without spending hours in the kitchen.
With Kai Dong Noodles at its heart, this soup comes together in a snap, offering a warm, soothing embrace in every spoonful. The noodles add that perfect texture, while the sauces bring a depth of flavor that turns a simple soup into a gourmet experience.
10 Minute Noodle Soup Ingredients
- 1 serving of noodles (Hand-cut noodles or QQ noodles)
- 1 ½ tablespoons Golden Shallot Oil
- 1 teaspoon Four Season Scallion Sauce
- ¼ teaspoon of white pepper
- 1 tsp of dashi powder (optional)
- 2 cups hot water
- Green onion and cilantro, to garnish
Moving on to another favorite of mine, Crispy Vegetable Pancakes. I love making a big batch before the weekend because they are so easy to reheat. My secret to getting them extra crispy? Reheating them in the air fryer! It’s a game-changer, really, because they come out as crispy as when they were first made, if not more. Trust me, once you try these vegetable pancakes, especially reheated to crispy perfection, you’ll want to make them a regular part of your meal rotation!
Vegetable Pancake Ingredients
This recipe makes around 10 pancakes.
- ½ cabbage, shredded
- 1 zucchini, shredded
- ½ carrot, shredded
- ½ onion, grated
- 2 potatoes, shredded
- Salt and pepper
- 1 cup of cornstarch
- 1 egg
DINNER: BIBIMBAP WITH SPICY HONEY GLAZED SALMON
I still found myself craving a little extra spice come dinner time, so I decided to add a twist to my beloved Korean dish: Bibimbap. For protein, I made my delicious spicy honey glazed salmon. To complete the dish, I chose a few favorite Korean Side Dishes, adding a variety of textures and flavors that complement the salmon beautifully. The result? A cozy, spicy Bibimbap bowl that doesn’t just satisfy your spicy cravings but also is a vibrant, nutritious meal.
Spicy Honey Glazed Salmon Ingredients
- 2 piece of Salmon Fillet
- 4 tbsp of Flour
- 1 tsp of Salt
- 1 tsp of Black Pepper
- 3 tbsp of Soy Sauce
- 2 tbsp of Oyster Sauce
- 3 tbsp of Honey
- 1 tbsp of Red Chili Flakes
- 1 tsp of grated Ginger
Bibimbap Sauce Ingredients
- 2 tbsp of Korean Chili Paste
- 1 tsp of Sugar
- 1 tbsp of Soy Sauce
- 3 tbsp of Sesame Oil
- 1/2 tbsp of Sesame Seeds
- 1 tsp of Rice Vinegar
