Every month is different, but I thought it would be fun to share the What I Eat in a Day blog post once a month so that even if you are not on your period, you can also get meal inspiration.
Since it was that time of the month, I was craving savory and delicious recipes that were quick and easy to make at home. My breakfast and lunch recipes normally take less than 20 minutes to make, while I will take my time to cook up something that I am craving for dinner.
In this blog post, I will be sharing WHAT I EAT IN A DAY.

BREAKFAST: AVOCADO TOAST W/ CHILI OIL EGG
For breakfast, I was craving something healthy but also hearty, so I made myself a chili oil egg on top of avocado toast. This combination has been my go-to breakfast for the past few weeks, it really hits the spot!
Chili oil egg is super easy to make, you basically just fry eggs on top of chili oil, and that’s it!

The star of the recipe is, for sure, my homemade chili oil. I drizzle my Homemade Chili Oil on EVERYTHING because I promise it is the best chili oil you will ever try!
It is super easy to make, and unlike other recipes, there will be no waste with this recipe. We will be blending up all the garlic, spices, and herbs to take this chili oil to a whole other level.
Ingredients
- 20 cloves of chopped Garlic
- 4 tbsp of Sichuan Peppercorn
- 25 whole Red Chilli
- 2 tbsp of Red Chilli Flakes
- 4 cups of Oil (I use grapeseed oil)
- 2.5 tbsp of Korean Chilli Flakes
- 2 Star Anise
- 2 Tbsp of Salt
- 2 Bay Leaf (optional)

LUNCH: 10 MINUTES SPICY NOODLE SOUP
I got so many requests for making my Spicy Noodle Soup, so here is my easy recipe ready in 10 minutes.
The perfect easy meal to make for any time of the day, customize your Spicy Noodle Soup with any toppings of your choice.
My Spicy Noodle Soup can be made vegetarian-friendly, and you can adjust the spiciness level.
Healthier compare to regular instant noodle soup and takes only 10 minutes to make at home.
Ingredients
- ½ onion, chopped
- 1 tablespoon minced garlic
- 2 green onions, chopped
- 0.5 tablespoon Korean red chili flakes, adjust to your spice tolerance
- 1 tablespoon miso paste
- 2.5 cups dashi stock or any stock of your choice
- One serving noodles

DINNER: AIR FRYER SALMON W/ CREAMY FETA SAUCE
