Taiwanese Soy Braised Pork was one of my favorite dinners growing up. The pork belly is braised until super tender, infused with a rich soy-garlic flavor in every layer. It’s savory, slightly sweet, full of garlic and scallion flavor, and perfect over a bowl of rice. Classic Taiwanese-style pork belly like this always feels cozy and satisfying, and even better as my lunch box the next day.

Normally, a garlic braised pork belly recipe like this would mean measuring out soy sauce, dark soy, sugar, scallions, and more hoping you got the balance right. If you’re new to braising or just don’t want to overthink dinner, that can feel like too much. This version keeps all the flavor but makes the steps easier. It’s beginner-friendly, great for busy nights, and tastes just like the homestyle dishes I grew up with.

Garlic Soy Glazed Pork Ingredients

Pork Belly

The cut of pork you’re looking for is a skin-on pork belly slab with clean layers of fat and meat. Before cooking, cut them into chunks around 1.5-2 inches (or 4-5 cm). This is a great size for even cooking and convenient to enjoy!

This braised pork belly recipe starts with pan frying first. This extra step locks in the juices in the meat, and to render out some of the fat. This pork fat infuses with garlic for the most fragrant, garlicky base for your braise.

Four Season Scallion Sauce

Braising pork belly typically needs sugar, scallions or green onions, onion, soy sauce, and dark soy sauce for color. But instead of having to measure out all of these ingredients individually, I love using Four Season Scallion Sauce from kai dong instead. It has ALL of these ingredients already, and the flavor is definitely Taiwanese Mom-approved. It saves me so much time cooking this dish, and still tastes like I’ve slow cooked it for hours!

I end up using Four Season Scallion Sauce more than I expected. It works especially well in recipes like this, but I also reach for it when I need something quick. I’ve tossed it with noodles, spooned it over eggs, and mixed it into stir-fries. The flavor is balanced enough to stand on its own and familiar enough to work with whatever I already have in the kitchen.

How To Braised Pork Belly

  1. Cut pork belly into even chunks about 1.5–2 inches (4–5 cm) wide.
  2. Pan fry pork belly for 4-5 minutes or until golden brown on all sides. 
  3. Add in garlic, saute for another 2-3 minutes or until fragrant 
  4. Pour in Four Season Scallion Sauce & Water 
  5. Cover and cook on medium-low heat for 35 minutes, making sure to stir occasionally to prevent sticking 
  6. Optional, before serving, remove lid, turn heat to high and simmer for another 5 minutes so the sauce thickens.
  7. Garnish with chopped green onions and serve.
